    You have changed my life! All these videos out there in the world, trying to confound me with specific hydration ratios and measurements, folding and fermenting times... and then there was YOU. Sweet, sweet you. You said, "It's gonna be ok, honey- it doesn't have to be that complicated." God bless your gift of knowledge transfer, combined with your super sweet "you can do this" attitude...

      I totally agree! I have purchased the scale even the right jars the temperature gauge the day counter even an Amish kit and then even a 233 year old they say starter package and to this day I still yet even after using 5 lb of flour have I been able to get a Sourdough loaf. But wait then there was Mary......... I think now I really have sincere hopes of being able to finally get at least a good start on making a sourdough loaf!

    I’m 74 years old and I have spent so much time watching sourdough starter and bread videos and I feel so stupid after watching them because I really am confused and I don’t understand them. I’m pretty sure my grandmother didn’t have a kitchen scale! This is the first series of videos I’ve watched that makes me think I can do this! Thank you for this simple explanation of the process and I have subscribed to your channel.

      @chriswells4400- I have never weighed anything! I'm sure some recipes are fussy, but not for the most part. I'm soon to be 74 and my motto is, " If its not fun , don;t do it". I recently had gall bladder surgery and the sour dough is much easier on my digestion. Just go along with her recipe. Worst case you could add yeast to it next time. My grandmother Hazel taught me how to cook. We are a working farm in central lakes New Hampshire. All the best ~ Diane

      @@TheRoseHomestead I have well water, tested, pure. Do I still need to use filtered water? Also think my house is too cold, it's not doing well. What temp should I try to keep it.

    For an almost octogenarian (77 years old) who has lived over half of his life out of his country (USA) whose heart is in rural living, I cannot thank you enough for this educational video.     I got my first sourdough starter and was trying to do the exact measurements. I watched your video on how to keep a starter and lo and behold, mine started working! Then I followed your directions and made my first ever successful loaf of bread! At the age of 52!!!! Thank you!!!!

      @tammy5533 a starter is I mixture of flour and water that ferments and has wild yeast and lactic acid build up in it. This starter is used to leaven or raise bread dough.

    I just cut into and had a couple slices of the bread I made from this recipe yesterday. OMG I LOVE IT! I have tried so many bread recipes over the last 40 years (both sourdough and yeast breads) and this one tops them all! I slice bread quite thin because it's my "feels like I'm eating more" thing after an 80 pound weight loss. This doesn't shred like most homemade loaves do when spreading something on it. The soft texture and flavor are amazing. It will definitely be a go to recipe!

    Thank you for this! First loaf was great, second better. Truly a life changer. For those in Canada like myself, I suggest 12 hours overnight, 6 to rise in the pan in the winter months...

    Mary, noticed you have other elderly young people baking your bread recipe. I made it recently with raisins, cinnamon and honey. What a delight. It is a blessing to see folks going back to the country, going back to the real basics. They even work here in northern Japan where I live. Keep going!! The old guy.

    I did it thanks to you MARY!! I was excited to start my first sourdough starter about 2 weeks ago...as it bubbled and aged I began the search and educate myself as to the way to make the bread...OMG...what a hassle! Stretch and fold every 30 minutes? I am a full time caregiver for my 90 year old mother ...an absolute privilege...but no way to really plan a day with such leisure and extra time on my hands for babysitting bread dough!
    I was about to throw out Dawson( named for the original sourdough gold miners in the Yukon at Dawson Creek. If that's not historically correct don't tell me.).
    But then I found you! Common sense, no nonsense, down to earth and closer to the recipes our pioneers used I'm pretty sure!
    I made this bread, my first sourdough loaf. I made some mistakes ( forgot the olive oil) and had to refrigerate the dough so it wouldn't over rise while I attended to my mom.
    And it turned out absolutely lovely. My confidence has grown tremendously and am no longer intimidated.
    Thank you so much. I am going to order some Everything Bagel topping asap. Following you faithfully from now on!💕

    Ive been making sour dough breads for a few years now and it can be a drag with all the autolese,folding ect,you have made a beautiful loaf and kept it so simple,also your presentation is so nice,i havent done a sourdough for a while,my 4yr starter died,and the hassle of it all,i just stopped but at the end of the day all i want is a simple loaf,you have inspired me to make that loaf ,bless you,from uk

    I am almost 58 years old, semi retired and have made yeast bread, but I am finally trying my hand at sourdough breads. I made an artisan loaf and it turned out great, but needed an everyday sandwich bread. I followed your very good instructions and just took a beautiful loaf out of the oven!     Of all the YT video's yours was the easiest and simplistic, I like that you measured in cups and tsp. I don't have a scale. I've used this recipe 3 times now. I had a learning curve but I'm going to say I'm at a solid 8 on my sourdough sandwich loaf now. Thank you :)

    Hello from Mississippi! I saw your video two days ago and decided to give it a try. I'm over the moon happy. The dough was a little wet because of being South Mississippi and the humidity is around 70%, so I needed that extra 1/2 cup of flour. Mine baked up so pretty and the sheer torture I had to endure for that hour-long cool down before cutting it was the worse part of the recipe. LOL Thank you, as I've been researching UA-cam for the best beginner sourdough sandwich bread, yours seemed so much more doable and easier.

    Another great recipe!!! Thank you again Mary. I baked it last night and we all enjoyed it. The honey in it was just the right amount. The only problem I had was the dough was too sticky. It was really humid and raining so that maybe the problem. But will definitely be making this again and again.

    Just made this again. It’s my go-to recipe now. I added the everything seasoning to the top after the egg wash. Oh my gosh, it turned out so fantastic. Crispy crust with lots of flavor and nice soft interior. Kind of like a pretzel. So glad I tried the seasoning.😊

    Baked it last night using whey in place of water (I have sooooo much whey!). Cooled it while we snoozed. We just cut into it after a slow warm in a 200° oven. I am a special kind of happy right now! Thank you once again for delivering the goods. God Bless and Happy Monday! 🌞

    Better late than never. I’m 62 yr man first time trying to make bread and 5 lbs of flour later and 6 loaves still Not there 😖
    Today’s loaf is about 30% better than the last and this one is eatable. yay. 🎉
    I am determined to get this recipe right! Down to the topping
    I created my starter about a month ago and barely getting double size after feeding.
    I’ll get there!

    This loaf came out sooo good! I have been fooling with sourdough for years with the same things you did. Measuring and percentages, levains etc. I’ve done the artisan loaves but I usually only eat loaf bread, so this loaf is perfect!
    I tried making a loaf starting in the morning with a fed starter. My plan was to bake it in the evening. We’ll, I forgot it and remembered about it after I went to bed. So I put it in the fridge overnight. The next morning I shaped the loaf and let it rise until doubled. It came out perfectly! This recipe is very forgiving; you can mess it up and it still comes out great! Thank you so much for this fluffy delicious recipe! Sarah from Tennessee
