Excellent video. I'd watched some before and, while they say it's a simple process, I felt there was so much to learn and know when using it, preparing, storing it and baking with it, but you just laid it on the table and made it look and sound much simpler than I was led to believe. I got my starter going yesterday and I was already starting to get really anxious about feeding, care for the starter, use of it, etc. But you have given me so much confidence. Thank you for your video! It's helped this first-time sourdough maker feel much better about what I'm doing in the kitchen with my bread now. :) I am now a subscriber :)

i make sourdough bread and have for years...i don't discard, ever!!! i have a small jar, just a bit bigger than a coffee cup, i take it out the day i make bread, feed it three tablespoons of my mixed flour and it's ready in less than two hours!! i need 180 grams of it to make my loaf, which is almost my entire cup!! i have maybe 1/2" left in my cup afterwards....so i feed it another 3 or 4 tbs of flour, stir it up and put it in fridge for next time!! easy peasy so discards

I am totally new to the sour dough scene and came across a few of your videos this past week. I had watched other videos as well but I can honestly say I’m liking yours the best! I’m not saying the other ones were bad but you give a more down to earth explanation of everything which is much less confusing than the others! I've been baking sourdough for a while and I like your take on the starter. I haven't been feeding before I refrigerate and I'm gonna try that. I do it when I pull it out then I have to wait until it bubbles up to use it. Thanks! Love your videos. Just joined and I've been enjoying them!

I have always kept jars of discard in the fridge and felt stressed about using it up before the end of the week because I thought it was only good for a week in the fridge. I love baking, but I don't need all the bread and most of my friends and family are trying to keep carbs under control. I am so grateful you made this video because now I see that I can store my starter in the fridge instead of on the counter top and just take it out and perk it up before I plan to use it! Thanks for sharing your method!
Mary, just finished till the end & now realize you said its fine to pull from frig & immediately take out 1 cup without bringing it to room temp when making a loaf of bread! 😂

Thank you for this! I’ve been struggling with knowing how to feed my starter. I have a home based bakery and I just started making sourdough bread. I get orders for bread daily and sometimes I don’t one day so I wasn’t sure what to do… 😵💫 Thank you so much! I didn’t know you could make bread with a starter that came straight out the fridge
This method is so much easier when it comes to planning out a loaf. As long as it's been fed within the week, it works when I use it from the fridge.

Good morning! Thank you for the video!! I'm going to try making another sourdough starter. I've tried a couple times and it doesn't seem to be as active as yours. I do the cold water float test and it never works out so I end up throwing it after 1-2 weeks. I'm very determined to make this happen 😂😂

I did it my daughter and I used our starter today and made muffins, strawberry and chocolate chip, and they came out delicious,. We cannot wait to try biscuits and pancakes and then eventually bread. I'm thinking of trying rosemary and sage biscuits with my fresh garden herbs.

I didn't realize you put the lid on. I saw othrr people say you need to put a dishcloth over the open jar to get more air. I will try it your way. It seems cleaner.
Just make sure the lid doesn't have a rubber seal. The starter needs air but I am not comfortable leaving it completely open with just a towel. Too many fruit flies around here!

Thank you !! I just subscribed… found your video on soft sourdough sandwich bread and I sure like how you do things and give a person confidence! I love to bake bread and have been for years. Iam going to try your way of doing it. Some people are so particular about everything it takes the fun out of it. I also quilt … I don’t call myself a quilter but I do it for the joy it brings mistakes and all. But when I first started learning the lady teaching me was nice but wanted perfection… like having the quilt police …. When I stopped going there and went to a new quilt shop I got so much encouragement from the ladies there and now it’s a joy!! Thanks for the simplicity- I'm a simple woman and like things that are kept simple so thanks so much. I have a question and you may have a video that answers this. If I don't make bread a lot, say no more than 3 times a month - it's just my husband and me, how often do I need to feed the starter? Thanks.
With it just being me and my husband I usually feed mine every 7-10 days.

The one in the video came from Walmart. But, a week or so ago, I got a Weck jar and honestly, I love it! It's so much easier to clean and the shape of it fits in the fridge better. I got the tulip shaped 1.5 liter jar. I wish I would have had it way sooner.

Hi Mary, thanks for making this video it was very helpful. I can’t remember this so I’ll go ahead and ask, do you use your starter with home ground flour? I’m trying to go to mostly fresh ground and have only been using yeast. My starter has been very neglected in the back of the frig.
I mostly use freshly ground. Sometimes I use all purpose. Depends on what I have on hand. Thanks so much for watching!

I would say at least every 7-10 days.
When its time to feed your starter, can you use a different kind of flour than what you started with?
Yes. I regularly use different flours in my starter.
I always appreciate your videos and I know I always ask you lots of questions. I am still concerned about using my starter straight from the fridge (I’m that one who has 3 jars of it fed at different times). Since starting my sour dough starter a few months ago, I have only made bread/pizza crust 2 times. I am considering getting rid of one jar and putting the other two together. My starter doesn’t usually look as active as I want so I take it out the night before I am going to use it, feed it, and leave it on the counter till the morning. I guessing if I used it more often and as it matures more, I’ll also be able to take it out of the fridge and just use it like you do. I guess my question is, would you agree that if I fed it more and used it more I could take it straight out of the fridge (I’m thinking it might also be more fermented as it matures. I just haven’t learned how to feed just one jar, I always took one cup out, feed it and that’s how I got so many jars. Also, I thought I had to keep them each fed starter separate since they were fed on different days. Wow, that was a lot of info and questions. Thanks again for your wonderful sharing and serving the “sour dough community”. 😂. I have to laugh because I once had a teacher who told the students they could all come by his office if they need help except me because I’ve asked too many questions (in my defense it was a challenging research project in a masters program much like sour dough started). 😂😊
Well, I have kept a few starters at one time, and to be honest, it's too much for me. I have a good rhythm with my one starter and it just makes it as simple as possible. If your starters are 3 months old, I would say you can do the refrigerator method. I would feed one of my starters, let it get good and active, put it in the fridge and then the next day pull out some and make a recipe. If you see that it works, you will have much more confidence in the method. Honestly, using my starter from the fridge like I do seems like it's even stronger at rising my bread. So, my advice is this: keep one starter and build it up and use it often. It really doesn't take long to get a starter mature and working great. I hope some of this will help you out! Should the glass containers be airtight in the refrigerator?
I have done both airtight and not. I can't tell a difference. Airtight will keep out any odors from the fridge, though.
So the routine is after your sour dough starter is ready to make bread then you put it in the fridge . And feed when low.
Yes, exactly. I use it straight from the fridge and take it out to feed it when it gets low. I let it get bubbly after feeding and then back in the fridge.

Well water will be fine. I wouldn't use distilled since it's void of all minerals.

I usually just feed mine when the jar gets low. It will have liquid on top in between feedings, I just stir it in and keep using the starter.

Mary, Tku so much for your videos. I am so new at this process & have seen a lot of vid's, but always come back to your simple & engaging directions. what size is your jar w your starter in. I just bought a 28 oz from Amazon & it looks tiny. In my frig i have a starter that was sent to me & i added the water & flour recommended 1 week & 3 days ago & have not touched it yet. Your jar looks perfect bc it looks easy enough to get into w your 1 cup. I think it is about 1/4-1/2 at the bottom of mine now. Also if i can get a larger jar, can i scoop all the starter into the new jar, & afterwards follow your 3/4 W & 1 cup flour, let it sit on counter 8 hours & then place in frig until im ready to make 1 loaf of bread. 1 last ? After i use 1 cup from frig in a bread recipe, do i put most (not all) of the rest left in jar in another jar for the discard for recipes, & begin the process all over again w the 1st jar. Sorry 1 last ? After its in frig after being on counter & it doubles & i pull it out, is it ready immediately to make bread w 1 cup or do you need to bring it to room temp before making bread. Tku again for helping me. Hope i did not ask too much. I am grateful i have someone like yourself to be an encouragement 🙏 😇

I use a half gallon size container. It's perfect for the starter. I don't take the rest out after removing some. I just put it back in the fridge and use it until the jar is low and needs fed again. You can use the starter straight from the fridge with no problems. Thanks so much for watching!
Mary, tks so much for responding! I finally found w/o seeing your response 1/2 gallon glass containers that matched yours for the starter. Anchor Hocking! I also bought a teak Spurtle. What I liked is that you so easily used your measuring 1 cup into the jar & that convinced me. Soon I will make your Sandwich for beginners after I feed my starter & place it in frig after it doubles. Your methods put me at ease after seeing so many different ones. You also finally made it so clear to me by just using the same jar for baking bread & for other recipes. Tks again for taking the time!

What if you don’t make break twice a week. How long can it keep in fridge and what do you have to do if haven’t made bread in couple weeks
Honestly, I have been experimenting with using the starter from the fridge when it hasn't been fed within the week and still have great results. I would just go ahead and use it until it needs fed. Another option is to feed it a smaller amount so that you won't have as much starter sitting in the fridge. But, I am having wonderful results with hungry starter!

After removing Starter from the fridge, how long do you wait to make bread and use in other recipes?
I use mine straight from the fridge and it works fine.
Mine keeps getting all the hooch (or liquid) and it dont grow. Should i keep taking out half and adding to it?
When a starter does this, I recommend adding more flour than water and making the starter thicker. It's a sign that it's just getting hungry. That usually takes care of it. I hope that helps. Let me know if it does.
How long do you keep using the jar before washing it ? I am new to sourdough starter 😅😅
I usually try to change out my jar once every few weeks or so. More often if it gets really bad.

Sure! Just put a small amount in a small container with a tight fitting lid. You can send just a spoonful and the directions.

Yes, absolutely. That will work great!
What determines the sourness of the dough and what can you do to increase it.
Sourness is determined by how long you allow it to ferment. For the most sour flavor, it's best to do an initial rise on the counter and then move it to the fridge for a long cold ferment. The longer you leave it in the fridge, the more sour it will be. Alternatively, the shorter the rise time the more mild it will be.
Hello mary! I have a question, i made my first loaf with fresh starter which was in the fridge, bread turned out great! But then when i fed my starter i waited till the next morning for it to rise, it didn’t rise to much, it’sa but active. Should i leave it out in a warm spot? Right now in michigan it’s about 70 degrees. Thank you!
If it is bubbly and active looking, it doesn't have to rise. The activity is the sign I look for. It should be just fine to put back in the fridge. I'm so glad your first loaf turned out, that's great!

Where can I find the bread recipe. I noticed you put milk, or is it buttermilk?
I just used my regular same day recipe and added the milk kefir instead of water.

No, but, keep in mind if you leave it out, you will have to feed it regularly. Putting it in the fridge cuts down the feeding so much.
Do you grease your cast iron pan? Everything seems to stick to mine
I lightly grease my cast iron. It takes just a little. A trick is to heat slowly over low to medium heat and add a small amount of fat (your choice). The slow heat up and fat makes them very non-stick. Hope that helps!

Yes you can! Sourdough is so versatile and I tend to use several types of flour and always have great results.

Hi there! Sourdough newbie here. Mine has definitely risen an inch or so (using a large wide jar like yours) but I don't think it has tuly doubled. I also have lots of bubbles (not quite as many as yours) and a very sweet fruity smell. Curious if you know why mine hasn't doubled yet? Can I bake with it yet or should I keep feeding a few more days? It does pass the float test, though I've heard that's unreliable. It's a bit more runny than I think it's supposed to be.
(I've been feeding mine regularly every 24 hours for about 3 weeks. On the weekends we went away and I stuck it in the fridge for those times, so it might be a little set back. Using unbleached AP flour and filtered water. Keeping it in my oven with the light on since it's cold here!)
Also, I have heard you should only use starter in a recipe when it is at it's peak. Is that true/better? Some people stick it in the fridge after peaking (as I think you have done).

I'm sure it is good to go. Mine doesn't always double, but, if it is very active and bubbly and has the sweet yeasty smell, I use it. I don't always use mine at it's peak and it still does just fine. I always put mine in the fridge after it gets active. Hope that helps!

Silly question how do you know how much start out to put in each loaf of bread that you were making some I’ve noticed a half a cup some are two cops. How do you make that decision?
For me it depends on whether I'm doing a same day loaf or an overnight rise. For overnight I use 1/2 cup for same day I use a cup.

No, I only feed mine about once a week. I only feed it when the jar gets low and it needs to be fed again. When the jar gets low, I take it out, feed it, let it get active and then I put it back in the fridge for the week, sometimes more than a week. Hope that helps!
