    This is also a typical dish of Panamanian cusine . In panama we have some influence from west indies after the panama canal construction. More in Colon province

      This dish came from the former slaves whereverthey werein the Caribbean, they were given the inferior parts of meats (chicken foot, neck, liver, gizzard, pigtail, cow heel etc) or leftovers by the slave owners. They used it and made their own delicacies.

    how long do you chill it before eating?

      Not too long - maybe 10-15 minutes. I dont like my souse too cold.
      *NOTE* Leaving the souse in the fridge overnight the liquid forms into a jelly like form.👎

      WhaToCook Trini Recipes And More no you shouldn't have thrown out the first water you boil the chicken foot in,that's the stock.When we make our chicken foot souse in Guyana we season the chicken foot water it was boil in that's call the stock and it's the best chicken foot souse ever.The plain water you season has no flavour at all just none
