I was of the view that onions spoil food when they go under some degree of heat, not when they are being pickled as chef explained that souse is pickled meat. Pickled onions are bottled and sold. Just a thought...

I washed my feet with lime salt and vinegar cut toes. Then stir fried in onions. Seasoned feet with some spices and a touch of fish sauce and added chopped limes. Omg. Delicious I didn’t boil and throw out the water. I want every bit of goodness.
I never cud eat it because of the colour but i need to eat some i heard it's good for ur knee when the catalage starts wearing off i will definitely try it

Hi,,next time if you could have added an approximate time for broiling feet and explained what the feet was being washed with,,especially after boiling...as for first timers,,I was unsure if you use just water or limes!

Trini people always complaining about arthritis down the road. Why would you throw out all of that chicken water? It is filled with anti-inflammatory nutrients, protein, natural chondroitin ( science highest quality extracts from there as well as cock´s combs) and the broth is treated as toxic? Other cultures make broth straight from the feet. Can anyone explain?
I've tried and had alot of souse growing up, and hated them all. I've never liked it and have always been offput by it. Perhaps if I try them when this lady makes it I may like them, but who knows.
