Only most ravioli and tortellini recipes are just ‘cook the pasta parcels in a couple of labels of hot broth’. Sprinkle with Parmesan. Serve. 2 mins tops!
The finale of Coco makes me cry too, it's the fact that she - a super old abuela - dies and runs to her parents, way younger than she is, yelling "dad" like a small child, I just can't I have tears in my eyes just by writing it dang!
By the way being born in the mid 80s I missed the peak wave of vodka pasta in Italy, and I've never had it. I'm kinda curious thoug I'd probably not eat it because of onion.
Yeah, the ending gutted me. It made me think about how much older people (most of them) haven’t seen their parents, their grandparents, in many decades. I could feel the pain and weight of time. It just illustrated the concept of time so perfectly and painfully.

Cut onions without crying? I find it is helpful to have a sharp knife (dull knives spray more onion while cutting) and also helps to refrigerate the onions before chopping. ❤✌🏼
Try to make pasta alla Norma next time. It’s a Sicilian recipe, not so hard to do but so good to eat 👌 Daje Mattè!

Put a wet paper towel next to the cutting board when cutting the onion. It will prevent you from crying. The chemicals in the onion seek moisture, that’s why it goes for your tear ducts. So just put a wet thing closer to it

Matteo is just so himself and I love it! And really love the recipes as I really love pasta and do not know the more authentic way to cook it. I also like the context he brings to his cooking! Delicious!
Greetings from Europe (north of Italy), I usually cook penne alla vodka without pancetta, it (already) tastes really good without meat, but I will try your version next time. I also add a tiny pinch of cayenne pepper, for the extra lava heat effect 😉 thanks for sharing your pasta wisdom!
This recipe is so 80s that even shrimps cocktail would be better in an italian table.

I’ve heard of two methods to help reduce onion tears. Both have worked for me with varying results. 1) freeze the onions before you chop them and 2) put damp paper towels or a damp cloth on or next to your cutting board. The bit that makes you cry is just going for the nearest source of moisture/water.

If you refrigerate your onions for a while before cutting it will eliminate or reduce the tears. Also, if you run them under cold water after peeling and cutting in half this will do the same thing.

You're so brilliant, Mateo! Thank you so much for all the laughs & recipes! The acidic gas in onions released by chopping is attracted to the moisture in your eyes, nose, mouth. (mucus membranes) a chef taught me to always chop onions with a piece of bread hanging out of my mouth. The bread absorbs the burny oniony air. Also, lighting a candle & placing near cutting board & finally, I've heard placing paper towels in water, then under the onion you're chopping also helps - but I can't get my head around how you only chop the onion & not get little, cut up bits of paper towel in your diced onion. Hope this helps! & you keep your flame burning so brightly! You light up the world! 🕯️🔥🕯️
Relatedly, while writing on the board during a Latin class I was teaching, I overheard a student pronounce _anno domini_ as though it were _ano domini._ I almost broke the chalk. (I’ll leave it to readers’ common sense and internet-search skills to figure out why.) You should have seen me trying to explain why one should take care with the Ns when pronouncing inflections of _annus_ (which _anno_ comes from).
Btw, I love penne alla vodka. Though I think pene alla vodka--the more playful and less gruesome version--sounds pretty interesting in its own right.
