For me big opportunity missed for a beautiful iron staircase straight through or off centre inside the silo.
But without a doubt this one of the best renovations I’ve ever seen!

As for your ceiling, after replacing the floor in my father-in law's old home , i used some old rope from the hay fork in the barn to out line the floor where it met the fire place. I first scribe the flooring to match the rocks of the fireplace, then glued the rope to the rocks for a border with some clear lexel. you have to brace it in place till it dries, but you could staple it to the ceiling. looks cool when it's done.

watching up lift up the sander, what you should do is get an old vintage barn block and tackle they used to lift hay up to the upper part of a barn and mount it in the top of the turret to use! When not in use it become part of the decor and is available if the owner needs to move things up and down the silo

Given that the timber was cheap or free, thanks to the Emerald Ash Borer killing ash trees in the area, and that they already have the mill and milled the trees into lumber themselves, and did all the labor themselves, they probably don’t have those numbers for you. Labor alone would be prohibitive for most of us!

You need another style of the upstairs to get to the top room. Vertical one with hands uses is not good point.Probably sircle small lift or full iron spiraling stairs from the second level to the third ,it is not good to use hands and legs to get to eating top room because of the hygienic matters.

got a question: from the looks of it top floor 2-3 ft below where bottom part of windows.SO wonder why wont you use steal beams suppport etc and ON very top part of silo build larger room ?...ie 14 ft radius can extended to 16 ft rad...that would increase area by 100 sq ft right away and structure probably can support extra 2 ft all around I know it will look like thing...say BEZOS rockets-blue origin :D and it will change the original look but small spaces are ...not worth really investment unless in monaco, hk, manhattan etc..I know you guys work hard fast unlike many youtubers wont blah blah endlessly for simple things so video will be longer ..so you should get good return on size, practicality etc that way
