Good video. Pretty much the way I do my elk back straps. I do 135F for 4-8 hours. For those who cringe at that low temp, remember, it's about time and temp. A temp of 165F will kill all the pathogens that make us sick, in 1 second. A temp of 135F will do it in 27 minutes. After those 27 minutes, the rest is letting those fibers break down for a tender piece of meat. Walnut oil...never tried that. Let me say this about your end result: Ummmmmmmmh. Thanks for the video!

1.5 hours at 130 is plenty. I don’t think 4 hours is ideal for that cut
