  • It’s Day 35 and going to cut into this beef strip loin from Fischer Farms Natural Foods using our Meatico USA dry aging cabinet.
    Cleaned up half and vacuumed with Invacus LLC / Henkelman USA Auro to throw couple steaks into sous vide and freeze the rest. The other half we are cleaning up on an upcoming episode of The Fell Into Food podcast.
    Stay tuned next week for the final result at 42 days of the ribeye.
