Shrimp shell is always an issue in Vietnam, probably in other Asian countries too. We westerners prefer to take the shell off (and we don't usually like the head). I noticed that you also did not remove the legs, which of course have shell on them too. Me, I prefer to take shells off. I didn't notice if your friend removed his shells. But typically, Vietnamese will just eat it whole with the shell still on. So any dish that has shrimp or prawns, it almost always is served with the shell on.
As a foreigner who cannot speak the language how can we order these dishes? I've been to Vietnam but I feel I have missed so many delicious dishes because I don't know the name or how to order. It's quit intimidating to walk up such a food stand especially when its busy. I've only ate at restaurant that have pictures of the dishes or English translation which were good, but it would be nice to order and eat at a place like this.
This dish is ok imo. If it's so good would made a name for it self like pho and hu tieu. Theres so many different type of dish, its endless even for a vietnamese lol. Only way you try diff food is explore/ experience or a local guide/ friend to take u around. Good luck

I find it easiest to remove the legs first and then pull off outward from there, myself. The legs are coming off anyway, and they take a bunch of the shell with them. Something small I can get a good hold on.

on second check, foreign service institute ranks vietnamese as category IV language which would be 1100 hours of study for an english speaker. category V is 2200 hours (arabic, japanese, chinese, korean)
Best way to learn ANY language is to immerse yourself amongst the native speakers...that's the advice I told my SIL when she came to the US as too many Vietnamese folks tend to stick to themselves and never learn proper English, much less get rid of the THICC accent. She was older when she came over and started working with only English speakers and totally understands English now. Still has an accent, but not the crappy kind that most Viets have when speaking English. LOL

Yes, those are shrimp-flavored crackers. They're fun to cook as they are like little flat disks the size of a quarter and you toss it in oil and it all of a sudden blooms to 10x it's size. Many Viets eat them growing up as snacks.

duolingo, anki flash cards, buy a textbook. probably 2000+ hours active study for C1+ level
