That makes so much sense- what you shared. I litrally was thinking of those tips as I tried to conceive how to do it right. Roma's are the right type, or at least the cooking tomatoes.

Thank you!!! I’m a newbie, and have a garden full of tomatoes about to ripen!! Your method sounds reasonable. Makes sense that you would want to keep those juices of the tomatoes with the tomato as it dehydrates!
Because of corona I put in almost 250 tomato plants , mostly roma. My wife cans but warned me she's only canning what she needs. Its the end of august now and last week I noticed quart canning jars are sold out , ( as I expected) I've dehydrated one small batch already. They turned out great. Just in case I'm saving seeds from some roma and other heritage types. I did try selling plants and tomatoes but most people are to dumb to be prepared. I'm thinking of vac -sealing and freezing. If power fails they'll still keep I expect.
If you go to Rose Red Homestead she teaches you to dehydrate them then powder that in like a nutribullet. If needed dehydrate the powder again. Then condition and put in jars with no oxygen. You can rehydrate or make tomato paste or sauce. Keeps in a far smaller space. Amazing!
@@nvalles2565 good idea. I did 3-4 batches after last season but haven't made much powder. My wife did a small batch and it was good. I still have several bushels of the romas I mentioned in the freezer. We didn't grow as many tomatoes this year but we still have a bumper crop. The wife put up 52 quarts and says she's done. we have half our tomatoes ripening now and no frost yet. Probably 4 bushels ready and 10 more possible. We usually lose 2/3 to frost so overplant is our strategy. I got sweet corn and indian corn that's 9-10 foot tall! I didn't know it even could get that tall. I'll check out Rose Red , thanks.
@@peepslostsheep hmmm sun is not reliable in a lot of places for open drying. A solar dehydrator will probably get the job done anywhere there's enough sun to have grown them in the first place. Oven is ok if it doesn't get over 120f/49c and if you don't mind the power consumption or heating your house.
@@andrewparry1474 I wasn't saying the other methods aren't good or useful. I'm just saying they aren't *sun dried* tomatoes. Sun dried tomatoes are dried in the sun... It's why they're called sun dried.
2 years ago but not too late to THANK YOU! Roma tomato is very hard to find in Thailand though (or else will be very expensive) I never do this yet but think of trying to experience some in the near future!
I grow tomatoes…they are absolutely delicious dehydrated….I grew some San Marzano and they just didn’t have as much flavor, so I went back to my regular home grown…not sure what is wrong with the way I am doing it, but think I will stick with sumgold cherry and my home garden varieties.
1fanger that's how I do all of mine remove the seeds and weird funk around the seeds and only do the flesh. Cuts time in half and ends up with just as much tomato left when the funk is out vs in.
You are right about the type of tomato, but you have to scoop out the seeds so that the halves are hollowed out. You should also sprinkle them with sea salt and chopped oregano before you begin the drying process. Thought you knew everything?
Those ones on the drying rack in the video don't appear to be blanched or peeled? Is that how you do it? What do you do with the tomatoes once they are dehydrated? How stored? How reconstituted and used?

I never understood why some recipes gut out the seeds and inner flesh of the tomatoes before dehydrating them. As this points out, that’s where yummy is.
I dry them on a cookie sheet and set them on the dash of a car sitting out in the sun. Free heat ! It only takes a day or two and they stay clean. I also use organic heirloom tomatoes, which are very meaty. I find Roma tomatoes a little lacking in flavor.

I dry them in my oven and I have for years they turn out lovely. People don't need an expensive food dehydrator to make sun dried tomatoes.
You don't need and oven or a dehydrator for sun dried tomatoes. Those are just dried tomatoes. Sun dried tomatoes are dried in the sun.

I dry any type of tomato, fleshy or juicy, cut in either halves or quarters if small, or if larger, in eighths, skin side down.
i squeeze my tomatoes or scrape most of the gel out.

I am finishing up a batch of Romas right now. I removed the seeds and saved them. They dry twice as fast, maybe quicker, if you do that anyhow.

The air might be too moist where you live for it to work. You might need to use an oven or dehydrator
Air circulation is important in drying. I put mine in my car with an electric fan on them :)

Italians never use the seeds from tomatoes, reduces digestive upset.
