Looks delicious! This is one of my favorite dishes. Couple of tips from someone who's watched many, many katsudon videos: 1) water works fine for the sauce, but dashi packets/powders are easy to find these days and will give more umami flavor to the sauce, and more complexity than just soy flavor; 2) many chefs will pour additional eggs over the cutlet close to the end, which helps bind the cutlet and egg and onion into a single item which then slides easily onto the rice.
