As far as I know, when you apply pink salt #1 (Prague Powder #1), you need to let the meat rest for at least 12 hours so the nitrite will turn to nitric oxide (safe to eat, kills bacteria that causes botulism). If you cook/steam the meat too soon, like less than 12 hours, the nitrites will turn into nitrosamine -- a highly carcinogenic substance.
i tried ung longanisa ni chef and masarap tlga sya :) ready na for baon s school .. i guess im ready na s mga ulam na ibabaon ng anak ko pag katapos ng quarantine :) im sooo happy..salamat po.. and now im gonna try this luncheon mealoaf.. i ordered online s pinksalt and the potato starch
