In the 70's and 80's there were 2 kinds of Reno canned liver. We don't use the spread for cooking but the other kind which I couldn't remember because it's not available anymore. Thanks for the kaldereta with gata, it's one of my favorite dish ( from my aunt ) which i still haven't tried cooking.

We add a little peanut butter instead of gata in our recipe, but we cook it in the same way as you did. Sometimes we use fresh chopped liver instead of liver spread.

Since Bicol has an abundant supply of Coconut, a lot of our dishes is coconut base. We even add coconut milk/cream into Dinuguan and Kare-Kare to name a few.
In our family chef, when we say kaldereta, it is composed of protein/mean preferably beef or kambing + tomato paste + liver then the aromatics plus potato & carrots. 🫰🏻
For us, Kaldereta has to have: ground roasted peanuts and shredded cheese for a thicker sauce. When I want to make it quick and add a deeper flavor, I use beer instead of water or beef stock.

To everybody who is just learning to cook beef calderata. Please know that you just don't dump everything all at once in the pot. There's a technique in cooking a more savory caldereta, and you can watch other's yt videos after this and learn on the process of how they cook it.
Chef is it ok na hindi masyadong madilim yung color? I made the same, pero sinamahan ko ng pickle relish, cheese aside sa chili and coconut milk. However it doesn't look much like caldereta as the sauce is close to orange. Taste wise i got it where I need it to be.
