The beauty of the Seattle dog is there's so many perfectly acceptable variations, so long as it's got cream cheese. Fried jalapenos? Still a Seattle dog. Grilled onions? Sure thing. Kimchee or sauerkraut? Yup. Hot sauce? That works. My favorite variant is just cream cheese, grilled onion, and Sriracha.
@@ForgotMyDemonName I dont like the taste of sriracha so I usually swap that out for jalapenos! as long as theres some spice there it nicely balances it out

I was in Seattle a few years ago and had this at a food truck at the space needle. Mine also had grilled peppers on it. I was amazed at how good it was!
Love the Seattle shout out. Bacon is not standard, but I bet it’s amazing. Love getting these outside of a sounders game and bringing it in the stadium.

It's such a good dog! Perfect after leaving the bars in Pioneer Square, back when Pioneer Square was okay to go to for while. I'd stop by his cart and get a bagel spicy dog with cream cheese and bacon.
Highly recommend adding Barley Malt Syrup to the boiling water when you're making bagel. Really makes a difference in texture, flavor and color of the finished product. I love this recipe outside of that
