Stories told on talk shows are partly scripted anyway. The host and the guest both know what they’re going to talk about. They won’t have a whole script or anything, but they’ll have keypoints that are discussed beforehand. So, even if this whole story weren’t meticulously planned by Nathan, it still wouldn’t be unusual for him to be prepared for a story that was made out to be a “tangent.”

It's funny...I'm actually studying screenwriting in school and I remember watching this and thinking, "The way he tells this story is in exact alignment with the formulaic Hollywood story structure style they're teaching us in school. I almost wonder if he wrote this out as a script or short story before coming on the show to tell it." I just watched season 4 of Nathan For You and it turns out I was right hahaha.
