- Decided to cook some JUICY pork chops on the Blackstone Griddle. I have used this method on a cast iron skillet or just a regular frying pan but this is the first time I tried on the Blackstone. Let me tell you, they came out FANTASTIC. The key is to baste them with the butter, thyme, rosemary, garlic sauce to speed up the cooking and keep them moist. Most people just cook them until they are dark brown and they get dried out because it takes a long time to get them that color. Also, cooked them with some baby potatoes that were purple, red, and golden. The different colors made them great for presentation and the fresh grated parmesan cheese at the end finished them off nicely. OMG !!! Finally a Pork Chop with flavor just bursting out. Originally I was going to use my own seasonings and I just wanted to watch your technique, but then your garlic butter sauce with thyme and Rosemary caught my attention so I did it and Boom !!!!! the best flavored pork chop I’ve ever tasted. I couldn’t believe the butter sauce was so fabulous !!! Thanks so much for this.

I cooked pork chops on my 17 inch Blackstone last night with potato cakes and Walmart Texas Toast with butter and garlic. It was a wonderful meal. I seasoned them with my standard seasoning - lemon pepper, salt, onion powder, garlic powder and black pepper. I could have cooked them on my 36 inch Blackstone but the 17 inch was a better choice - easier to clean up. I have cooked camp fire potatoes many times on my 36 inch and steam them with water, covered by a dome and dice up an onion with them. You are right - they do take a long time, about 15 minutes to cook. I did throw my bacon press on my pork chops at the start to keep them from curling up. I also put the dome on them to help to cook them. I cook mostly oh high to medium high heat.

New to Blackstone cooking. I will definitely try these pork chops, they look yummy. Just wondering if you cook your potatoes before the chops aren't they cold by the time the chops are done? Just want to get my timing right. Think putting them in the microwave first is a great idea. Thanks for sharing and happy griddling!
Hey Deanna, thanks for stopping by. If you have a big enough griddle you can just move them to a cooler zone. Or you can do like I did and take them off and cover them either with foil or in Tupperware. They will stay hot for a while... Hope this helps

Great question, I had the Blackstone on around medium high. About 425 degrees for around 2-3 minutes per side. You'll know they're done by pressing down on the thickest chop, loooking for pretty firm. Also, you want too cook them that high so you get the nice color on the outside. Thanks!
