Thank you for sharing this recipe! I'm a (former) professional chef and I visited Japan in 2015. Since then I've tried to recreate the ramen that I had on my visit and this took me right back to that time! Absolutely delicious and worth the time and effort.
I decided to commit and cooked this with a friend of mine. The total cost of ingredients at our Asian market was 71 dollars. Made enough to feed 4 people for two whole days. Was absolutely delicious! Never cooked anything from scratch before, and this was hands down the best thing I've ever cooked. Thanks for the video!
Definitely try and find somewhere else to get these ingredients these ingredients only cost me around 20-30 dollars without spices and basic aromatics.
Made it today! Whole thing cost about $40 to feed 3 people. We each got seconds AND theres more than enough for tommorrow! Although, I couldn't find kambu but my local HEB had umami broth. I sprinkled a packet of that in there and it was amazing!

The only thing I do differently here is I roast my garlic and ginger - just to give a nice robust and deep flavor. Additionally, I typically always soak my eggs in soy-sauce, sake, sugar, and mirin for 1-2 days in the fridge, they yield excellent flavor. One more thing - creating your own ramen noodles from scratch is easier than you think! Take a weekend to learn it, it's a lot of fun and a lot more delicious. None-the-less, excellent video for beginners.
That's the best thing about ramen. There's a lot of variety and combinations that no one recipe is the "correct" one. I add some slightly roasted onions and dried fish myself.

I made a version of this with a chicken ramen noodle packet. Added soy sauce, garlic powder, onion powder, a tiny bit of olive oil, and sugar to the “broth”. I fried up some spam and boiled up some eggs which was the hardest part. And sautéed the green onion. This was great! Not as good as this I’m sure but this was the inspiration. Thank you, Seonkyoung! EDIT: ramen stored in the fridge overnight and eaten the next morning is BOMB!!! The flavors marinate together longer and the egg soaks in some of the broth. 😭❤️
I do similar, but instead of olive oil and sugar, I use sesame oil and mirin. Also add a little sriracha to mine cause I like it spicy. Good way to fancy up that instant ramen for sure.
I do that too. Pork bone broth is quite a chore to make. And I think the result with chicken stock is quite close what the clear broth type shoyu ramen they serve in jap restaurants

This recipe sounds pretty involved. Look around - you Will find one that works for you. Don't give up on this. You will be rewarded. Yummm.....

I only had two problems with this recipe: 1: I don’t have any big pots so I couldn’t make as much. 2: I wore a white shirt. Oh and Jacob is right. It is between 80-90 degrees here and I still love this ramen!
This was sooooo amazing! I cooked for my girlfriend for the first time for valentines day and she was blown away by this, the pork belly came out perfect. The only additional step I did is boiled the pork belly in a seprate pot first, similar to what you did with the pork bones, and I had to add more water as the broth was low @the 3 hour mark. Keep it up! Can't wait to try another one of your recipes!
Thank you. I made this. Used cheese cloth like you suggested and the neck meat went into some sweet bbq as well. Good stuff and nothing like packaged ramen. Amazing stuff. The broth is awesome if you put it into cubes for when you need it.

I made this and just ate it and it was so so so so so good! 美味しい! I’ve never attempted anything like this before and am so glad I did, i made the broth a day in advance and it made for a easy dinner tonight... just cook the ramen noodles, tare and some simple garnishes. I also poached an egg for 4 minutes which went perfectly with this!

I’ve made this recipe twice now and it’s absolutely amazing! My only suggestion to anyone wanting to make it would be to start earlier than you think. This recipe takes time although it’s not difficult. I started at 2pm and didn’t eat until 8. Not complaining, just stating the time it took me as a non-chef. Most of that time is waiting
Sadly at least here in the states if you can find a place that makes legit ramen they tend to overcharge. I did pay 15 bucks for a bowl one time but that fed my family of four it was so massive so worth the price. Check some sushi places near you. Sometimes they have ramen on the menu but don't advertise it.
This was an amazing experience! I feel like a bona-fide chef it was perfect! And the best part is with all that extra broth I get to try different noodles to see what I like best... oh... I think I'm addicted to Asian markets now... SOOOO MUCH TO SEE!!
Are you allowed a crockpot or hot plate? Can you cook meat (like for 3 meals) at your folks and freeze it ?or You can buy precooked meat like tyson grilled chicken for example... and frozen or canned veggies..cook them in the crock pot or Add them to those microwavable ramen bowls

Ok. I have to comment. We have made this several times and it is to die for. The only thing we have done different (and you don’t have to, we just prefer it) is after the pork belly is cooked in the broth, we put it in the slow cooker overnight with some of the dashi and ginger slices. This is the best ramen I’ve ever had. It’s so much better homemade and even though it takes some time, it is well worth the effort. Thank you for this phenomenal recipe!

Sadly at least here in the states if you can find a place that makes legit ramen they tend to overcharge. I did pay 15 bucks for a bowl one time but that fed my family of four it was so massive so worth the price. Check some sushi places near you. Sometimes they have ramen on the menu but don't advertise it.

This was an amazing experience! I feel like a bona-fide chef it was perfect! And the best part is with all that extra broth I get to try different noodles to see what I like best... oh... I think I'm addicted to Asian markets now... SOOOO MUCH TO SEE!!

Are you allowed a crockpot or hot plate? Can you cook meat (like for 3 meals) at your folks and freeze it ?or You can buy precooked meat like tyson grilled chicken for example... and frozen or canned veggies..cook them in the crock pot or Add them to those microwavable ramen bowls

Ok. I have to comment. We have made this several times and it is to die for. The only thing we have done different (and you don’t have to, we just prefer it) is after the pork belly is cooked in the broth, we put it in the slow cooker overnight with some of the dashi and ginger slices. This is the best ramen I’ve ever had. It’s so much better homemade and even though it takes some time, it is well worth the effort. Thank you for this phenomenal recipe!
