This recipe is just awesome. I just used Stewing steak as I already had it. It probably would be better with Oxtail, (if it could be), so next time I will buy for this recipe. I started off in the pan then switched to my slow cooker. My new favorite stew!

I just made a batch of peas and rice using pink beans and oxtails using your recipe. Everything came out so well I could probably sell plates and plates of this. Thank you so much. I will be making curry chicken next time lol
This is how I learned to make Haitian oxtails by my daughter grandma. Minus the carrots and potatoes. From what I'm told tomato paste is a MUST in most Haitian and Bahamian dishes like this. Anyways, looks delicious!!!!

I also cook oxtails very good myself, but now i see that it's best to marinate for a couple of hours or over night. I also use all spice and oxtail seasoning as a marinater. Thanks!
Hi Chris in Belize we use something called recado or nata instead of the tomato paste to give it that nice brown colour and add flavour. Not sure if you heard of that we use it to do most stew with. In Belize we never use browning or sugar always recado!!! Love your channel!!

I do love oxtail stew and as you said it is very expensive. Your suggestion of turkey necks is a good one as I also love my neck-bones and turkey necks are meaty. Thanks also to Bapsayti1 on that tip of covering tomatoes paste with oil.
Looks very tempting. It sounds like a long cooking ordeal however and I understand that, to a chef the drawn out process can even be a joy. Would a pressure cooker make the same thing in half the time? My wife is Filipina and they make a version of this and she may try this version soon. Thanks for posting.
I was looking for images on Google for both curry oxtail, and regular seasoned oxtail, and your oxtail showed up, and didn't even know that it was your oxtail until just now. lol. I love my caribbean dishes, even though I only know how to cook certain, and very few caribbean foods.
Chris, you are the best. I said to myself, let me go check out some other sources, but these people throw in onion powder, garlic powder and the likes. You come out with the real thing, everything wholesome and healthy, except for the tomato paste, shame on you haha. Great recipe though, this is going to be cooking in my kitchen, I will substitute the paste for a tomato.

couldn't find scotch bonnet peppers anywhere but found "jamaican hot peppers" at the asian market. didn't think it would be as potent as scotch bonnet so i put two in and bursted it in the end. it was damn spicy, but so damn good!! underestimated those peppers lol
ah like yuh vids and stuff but ah doh really like this method cause u know every "stew" in trini is with burning brown sugar lol....but yours still come out looking good man maybe i can try it
