    "we wash our meat in the Caribbean" - yay solidarity! In PH as well... we wash fresh fish and meat with salt, fresh lime and lime leaves, especially if it's just butchered or caught. Makes a world of difference, as well as added sanitary steps!

    I’ve learned soooo much from your channel. I’m now the go to in my family for Caribbean food...especially your pepper sauce I added my own touch though I add crushed pineapples it’s crazy good. Oxtails look amazing brother keep it up.

    Love this. I made oxtail yesterday but I used a slow cooker. This looks awesome!!!

      this can be done in the slow cooker too. After the browning process add everything into the slow cooker (but with 1/2 the water and 6-7 hrs

    I make mine the same way as you. I made some for my God daughter and her siblings the summer over and they loved it!!!
    They left me two little pieces and some of the stew and asked if they could have that!!! LOL

    I love your recipes andii am making this exact one right now. Just getting ready to put that top on and let that simmer down. And I just looked and lo! I even have butter beans in the freezer. I'm adding potato and carrots but other than that, I xant wait for the results. My first time cooking oxtails.

    Perfect timing! I am making this during the Christmas season. I got some beautiful oxtail from T&T grocery and your recipe looks delicious 😋 Always on.point!👍🏼I usually tie the sprigs of thyme together with my a piece of butcher's twine so easier to fish out

    i always add cellery , i keep the small parts people throw away dry them , grind them and use it as seasoning , just dried on top of the cooker in a sieve over to stop flies , you can do this with many things like green onions , dry the green part and ging it , good in a seasoning mix that is chemical free , i do use packet seasonings , i just use one packet ones when i have them i dry al kinds of herbs and chili and sweet peppers too , they are good to add to soups and stews , after all takes no work other than the grinding and these days you can buy grinders so no work there either , oh and for sure i save seeds and grow them

      the only butter bean dishes i was taught was cows leg and butter bean curry and butter beans and pork fat fry , this is new to me , i love oxtail and love butter beans so should be nice , thanks

      i would agree but also the meat looks nices for being browned , but true say its for the caramelized meat juices left at the bottom , that is old school seasoning cubes and browning

    (Jamaica) I pressure at 10lb. for 15 min after browning ... Yu deh pon spot bredren... the flavour in de pot bottom ... My fren here from Toona Poona does make a rum-based punch with raw egg an milk ..ever hear bout ?.. Stay safe, boy !!

      Served best with rice. It can be plain rice, coconut rice, rice and peas etc. Or with mushed potatoes. Or corn meal mush called Nshima

    Is this on high when you’re searing!? My fond always burns by the time I’m searing all the oxtails (I buy 3-4 lbs)

      It takes a while to go through that amount of meat, so your heat is probably on too high I would guess.

    Man I burn my sugar and I make my own wet seasoning , I let my meat soke in that wet goodness k put my oil burn my sugar add a maggie cube a lil coconut milk and a scotch bonnet .
