This recipe came just in time--soup, blankie, and a binge worthy show, here I come! I love the idea of roasting the pumpkin and carrots. I have to give that a try. When I make soup though, I cook my provision separately (except the dumpling, pumpkin, and squash), and add them at the end if we are going to finish the soup the same day. If not, I refrigerate them separately. When it's time to eat the soup, we get out the pieces of provision we want, pour the soup over it and microwave. Thanks for a great recipe! Blessings.
I wish you would say what the Caribbean Spice had in it, or if there was something else that would work that’s labeled differently. I’ve never had this type Oxtail Soup but I’ve always liked any kind of Oxtail Soup & anything that has the word “Caribbean” in it!! I worked with someone who made it the “Alabama Soulfood” way & that’s always been my favorite, but it’s great no matter what “kind” it is.
Thankful for this recipe. I’ve been waiting on an oxtail soup recipe but this roasted oxtail soup is a game changer. Question: does the length of time the meat takes to cook allow the split peas to get soft? Im used to boiling them separately and then kinda blending them when they’re soft.
Whenever I make oxtail, I cheat and add some beef leg to it, as well, in order to have more meat. I cannot remember the name from the carnicería, but it is something like carne de pierna. It is cut across the leg like oxtail across the tail. It makes the meal a little more economical, and one still has the richness of the oxtail in the dish.
''nothing at home to cut those bones?'' Don't underrestimate us carribean chef, you ain't got a clue what some of us got in our homes to cut bones with. lol

Wow that looks so good never try roasting but will do so you always do a cook with everything all natural
