Been encapsulating beef liver and other supplements ever since i got my FD. Very helpful. I'd recommend not using those beets as they are lower in quality and the cans may be lined with BPA. Best to go organic or even better buy fresh organic beets and truly make the best of the best.
I love fresh organic beets out of the garden. I peel and slice them in the sink to avoid the red juice getting over anything and staining it. They do not have a dirt taste to me when eaten raw. I do not cook them. That's when the dirt taste happens. I love them raw. Just had one yesterday. Very filling.

Single ingredient powders = baby food. We used freeze dried powders to introduce foods one at a time to the grandbabies, and no allergies even though there were food allergies in the parents. Made our own “pouches”
I would love to see how to dry tumeric and ginger. I am getting my freeze dryer tomorrow and looking forward to projects like this. I do agree with some of the other post, using organic is better. The inexpensive brand of beets you were using is not the healthiest there is. 😊

I do have a question about candy in the freeze dryer. My top and bottom shelf do no process as well as the two middle shelves. Do you know why or have info on this. I have also experienced this and I'm not sure the exact reason. Probably something g to do with the cylinder shape and vacuum pressure. You may be able to search the fb or mewe groups for an answer.

I grated, then blended with a bit of water, and put it in the freeze drier. Do you know if the health benefits are different with raw verses cooked beets? Cooked beets would definitely be easier to blend.

Powdered FDed foods have the best chance for long term storage if done properly. I do like doing my powders in jars, so I can see the powder. Just my preference.

If you are just after beet powder, I would keep them raw, cut to a smaller size chopped or blended smooth. Then freeze dry and powder. Make sure you use the juice as well.
You can't fit the powder of one whole beet into a capsule. Youd need to take about 20+ for the equivalence of one small beet. But taken daily, you likely dont need to eat an entire beet every day. Make sure you get high quality organic beets as the beets he used are really low quality/cheapy and you dont want to skimp on the health benefits by buying a low quality product
Another suggestion to try for your health is cranberries. I used to be a nurse in long term care. We used cranberry capsules to reduce incident if urinary tract infections, particularly in female residents. It really made a difference. For those who couldn't swallow a capsule, we opened it into a bit of apple sauce and mixed up. Worked well.

With the number of videos you've produced (Kudos for that) and the number of subscribers and views you have, you're obviously not retired, you've just changed your career to that of a you-tuber.

Setting? You should only have to press start and freeze dry. The older machines had to be manually set

What is the shelf life of the capsules? The powder will absorb some moisture at some point. Will there be any issue after that?
Unless your home is extremely humid, I would imagine these would be fine for 2-3 years inside a capsule and stored in a sealed container
