  • In this video I demonstrate how to make a light airy bread that turns into delightfully crispy toast to eat with butter, jam, avocado, etc. This is NOT a white sandwich bread, though I think it would taste good that way as well. It’s just much better toasted!

    Make using the dough course or bake on white or basic course, medium crust.

    210 grams milk or Half and Half
    110 grams water
    500 grams King Arthur bread flour
    15 grams sugar
    6 grams salt
    4 grams baking soda
    8 grams SAF instant yeast
    Sprinkled greased, parchment lined two pound loaf pan worth cornmeal.
    Before baking, egg wash, sprinkle on cornmeal and kosher salt if desired.

      I stopped using cookbooks and have been developing my own recipes now for a couple of years. My whole channel full of recipes are all in grams and free! Have you watched my video on converting to grams?

      Hi David. I’m glad you enjoy the videos! That bowl actually came with the scale and sits on it. I don’t often measure into it though. Here’s my scale. It’s so inexpensive and so dependable!

    if you align the length of the parchment paper with the length of the loaf pan, it will fit the pan better.

    Well am in the middle of my first go at this bread, tested to see if it was ti dry or wet thought it was OK but had to use floured hands to get it out of the pan lol trouble is the bread machine is very old and doesn't stop when opening the lid to test, now on the proving stage so fingers crossed x

      My dough wasn’t sticky. You probably needed more flour. Let me know how it turns out.

      ​@@BreadMachineVideosWithEllenH I made another one as I realised a few mistakes I had made, one using the milk from the fridge and not using bicarb soda also used newer yeast this second time, also more acurate with the ingredients. It waws much better but didn't rise so much as yours.     Hey, Ellen, so nice to see your smiling face☺️. I’ve been making KA’s version of English Muffin bread for years; honestly I’ve become a one-trick-pony and haven’t branched out much. But me and my Fella just love it so there’s that. Anyway, the recipe calls for a teaspoon of white vinegar, but the rest is the same. I don’t know what that does chemically but I can’t say it adds any kind of taste. Perhaps the size of the holes/texture. So I’ll add your version to my bag of tricks and even bake it in the oven. Now that S Az is getting cooler, I don’t mind turning it on as much.

      I just put my ingredients in for the dough course. I wondered about the baking SODA so I looked at your written recipe both times you put it on comments and description. Perhaps it takes the place of the vinegar in mine which calls for baking POWDER. Golly, I hope my loaf pan is big enough…perhaps I should split the dough in two🧐

      How big is your loaf pan? Any 9x5 or 10x4 will do.

    Hi Ellen! Sorry to be such a bother, but I have another question...... The following is a recipe that I've done the 'hands-on' way for a few years. It's for artisan bread and we really love it. After taking a look, do you suppose it would work in the 'dough cycle' and then baking in the oven in a Dutch Oven, the way I do it now?
    CHEESE BREAD
    3 1/2 cups bread flour
    1 1/2 tsp salt
    1/4 tsp instant yeast
    16 oz cool water
    1 cup cheddar cheese
    Mix all dry.
    -------------------------------------------
    Cover and proof on the counter 12 hrs.
    Then, degas and make into a 'rough' ball.
    Put light on in the oven and proof in oven for 1 1/2 hrs
    Preheat oven to 450
    Heat dutch oven for 20 minutes
    Place dough in dutch oven and bake for 35 minutes.
    Please give me some advice if you have the time. Thanks for whatever help you can give me and I sincerely hope you and yours have a super Turkey Day!!!

      The only thing I can say is to try it. I don’t know why it wouldn’t work but it may have a slightly different texture.

    All I have on my baking shelf is self-rising cornmeal. Can I use it to sprinkle on top of my loaf?

      Hmmm. I have never heard of self rising cornmeal! Since you’re not mixing it in, maybe it wouldn’t hurt.
