Thank you Ellen for all of your wonderful beginner videos! I watched them all prior to my machine arriving today at 5:45 pm. Bread was in the pan by 6:20! I checked the dough 5 min into the knead cycle and added just 4 gm of flour. It looks perfect so far. Just waiting for it to be done at 9:45 so I can cool it and have a bedtime snack!

Thank you Dear Lady! I have had my Zo for probably 10 yrs and have only used less than a hand full of times… you are such a great teacher and have convinced me to dust off the Zo and get to making 🥖 🍞 🥯!!
Thank you so much, Ellen! I am just baking my first loaf of bread in my Virtuoso Plus that my husband gave me for Christmas. I watched your video as I went along, pausing as I followed your steps. It is in my machine on the "rest" cycle. Loved measuring the ingredients by weight! Made it so much faster and easier! Thanks a million for making my first experience enjoyable....so far! Just started the "knead" cycle. So much fun!
Ok so watch that dough! You may have to add water or flour! If it isn’t forming a smooth dough ball and looks dry add a tiny bit of liquid at a time and recheck. If it’s too wet, add a tiny bit of flour (sticky instead of tacky, dough under the paddles) at a time. Keep rechecking until you have a smooth dough ball. Let me know how it goes!

@patkeys3652 I’m so glad you like it! Funny thing about that recipe. I never made, bought, or ate white bread growing up or now. I couldn’t understand why anyone wanted to make it. I tried all the popular white recipes and they had no flavor. My bread friends kept begging for a white bread recipe that had the soft texture but also had flavor. That’s the genesis of this recipe.
It is fascinating to know that the rest temperature brings everything to the correct temperature! I have been using the microwave and an instant read thermometer! Great info! Thank you!
Thank you so much, Ellen. I just replaced my almost 30-year-old machine with a beautiful Virtuoso Plus. I found your video and your hints are so helpful. My first loaf came out so well. The texture is perfect and when I proudly offered my husband 1/2 of the first slice, he commented that it tasted like real bread. I don't think the old machine ever deserved that compliment.
Hi Ellen. I am so excited to watch your video series. You are my bread Guru! My new Zo, like yours, should arrive today from Amazon. Thanks for all you do to teach us newbies or intimidated bread bakers! Ellen
I am so glad I found your channel. I just ordered the same exact machine you have. I get mine next week. Can hardly wait. Thank you so much for the detailed video & the typed recipe in your description box. You are teaching me a lot about bread. I am a newbie & need all the help I can get. ☺
Ellen, thank you for such a great, comprehensive video for newbies such as myself. I received my ZoV+ for Christmas and have made a couple of loaves, but still felt intimidated by the machine. You've help me feel more confident. I made your Fluffy, Soft White Bread. It came out beautifully and is delicious! I look forward to your other videos!
Don't own the Zo, but do own the West Bend Baker's Choice horizontal bread machine, and have owned it for 15 yrs. Love it, love it, love it. It also has two paddles. From 15 yrs of baking, I did forgot the paddles the first time I made bread. Like yourself I now dry my bread pan immediately after washing, replacing the paddles before reseating it back in the bread machine. (LOL)
Oh I’m so glad. You might want to review my playlist for beginners to brush up on your skills. Here’s the link.ua-cam.com/play/PL4uX4aR9ec7qnDFrMQ6qmvIZcUyzTiPYC.html
Wonderful job, Ellen! I read my manual thoroughly before I tried to use my bread machine for the first time, but I must admit it was overwhelming. If only I'd had this video to guide me. I don't have a Zo, but I think your little paddle "flick" might work for my Cuisinart. I'm definitely going to try that when I bake this week.
I am so happy I ordered that bread maker on ebay, I was looking at a used one that was tested, but it was $229 plus shipping. I paid over $391. I got a warranty on it too. I hope I can make bread as good as yours, I loved you making pumpernickle and sweet bread. I have to try that. Thank you so much. Its nice now you can buy full powder milk. I love it I get at walmart.

Been watching you for a bit been enjoying my bread maker still learning something’s but overall my bread has been eatable. I made my first Hb buns and of course they were to big but no waste we just ate them for breakfast with eggs and bacon. Forgot to egg wash the tops but still was good. Thank you so much for everything.
You can just make bigger burgers too! Glad you enjoyed them! I also make hamburger buns from my brioche dough. There’s a video for that on my channel as well!
Thank you so much, My daughter Inl law gave me her Toastmaster bread machine, but I can't find any recipe or how to use it. it is so frustrating until I finally found you!!!!❤😊 thank you. You make my day 💕
You should probably find the instructions manual online and print it out. Just find the model number and search for the pdf. You need to know the order in which the ingredients are put into the bread pan. Mine is liquids first, but Toastmaster may be different.
I am Granny Rose 🌹from South Africa. I have just been given A Russel Hobbs Bread Maker. Am really looking forward to using it and have found your video very practical, and your tips on use very essential. I will let you know how my first loaf turned out !
Hello Ellen, I'm Helen! LOL! I am so glad I found your videos. I love Zojirushi but just got it and have been so overwhelmed. You have helped me so much and I thank you!
Thank you for making this video! My daughter is gluten sensitive and I bought a bread maker so we could make gluten free bread together. Unfortunately, we are virgin breadmakers so our first few loaves yielded vastly different results even though we painstakingly measured every ingredient. The first loaf resembled rocks so into the trash it went. The second loaf was dense but edible so we counted it as a small victory. The third loaf didn't rise at all and was probably too wet. It joined the first loaf in the trash. We were so frustrated and defeated that we haven't used it again in 5 months. Now that you explained weight vs. measure and I've seen what the dough is supposed to look like, I'm confident that we'll be able to make edible bread. So with renewed hope, I'm ordering a scale and excited to try again.

I will. Hubby had surgery and can eat wheat bread but not white. He likes Walmarts honey wheat and so does everyone else, so I am going to give making bread a try. I will be watching your video’s..
That is probably due to improper measurements. Please go to my website. Search for the words measuring and weighing and also the word dough. You’ll find the videos that show you! EllensBreadMachineRecipes.com
Thank you for this video. I bought this bread machine and have made about 4 white honey loaves, and 1 banana nut bread. I am going to use your recipe to do white bread. I too like King Arthur's cake flour. I had never heard of doing measurements like the Zbook instructed, but now I wish (only after a few loaves and using that system) all recipes had it.
Hi Ellen, I really enjoyed watching your video. I was tidying out my loft and found my 18 year old Bush bread maker , so I decided to take it back down to the kitchen. I only used it a few times way back then. So much has changed since I bought it. With online tutorials and recipes at the touch of a button. I loved your easy to follow tutorial video for newbies. My bread maker also has a rest period before starting up, so your recipe is perfect for me to try out. I will be out shopping tomorrow for the ingredients. So looking forward to getting started! Thanks for sharing ❤

@@BreadMachineVideosWithEllenH Hi Ellen, I just finished my first bake. The colour is perfect and it tastes gorgeous. The only problem is that it sank in the middle by about 1 inch. I did check it a couple of times after 5 and 7 minutes after it started to mix. It looked good, not wet or dry. So I don’t know where I went wrong? But I enjoyed doing it!
Hi Ellen, I just subscribed. I have had the little white Zoe bread machine since 1988 when my Mother got it for me for Christmas. 30 years later, I wore it out. Because they did not make it anymore, I bought another one of the same kind, that was used on EBay. I used it 5 years or so, and it just gave up the ghost. So, because they still have them on EBay, I will purchase two of them, to have one in reserve. Yes, they are used, but they are just the best machines. I make dough in them more than my large Zoe, the Home Bakery Virtuoso. I have just hated the Home Bakery Virtuoso because of one thing….it does nothing for 20 to 45 minutes. Now I know why!!! Thank you for telling me. It takes so long to make a loaf of bread that I rarely used it to bake. I just used the dough cycle in it if I had a large amt of dough to mix and couldn’t use my little Zoe. Now I know what and why. Thank you so much for telling me that I do not have to let the ingredients come to room temp. That is a game changer for me. Plus, not getting the bottom wet on the pan was so important. I still have a love affair with my little Zoe (that is much larger than the little Zoe they presently sell) and will continue to get ones, hoping to have another one last 30 years again, from someone who barely used it). I just threw out an Sag or Sig bread machine, can’t remember, and my daughter-in-law got it out of the trash to take to work to give to a co-worker. It was smaller like my little Zoe but nothing like it. Cheaply made for sure. Zojirushi is just the best bread machines. I also just bought an Ankarsrum Mixer and it makes bread in a different fashion than most mixers, and I am loving it too. I make a lot of bread, 3 to 4 times per week, as we live out in the middle of nowhere and have to do it! I could not survive without my machines as I am getting too old to knead the bread by hand anymore. Anyway, thank you for the video. It was eye-opening for someone who is not a newbie! ❤

@@BreadMachineVideosWithEllenH I am just watching videos. Like the Z bread machine - the one you have. When I have questions I will keep in touch.
Finally got internet back yesterday..its been a hit and miss. Today my Zo V+ was delivered. I have now read the entire book..I cleaned the pan with just a wash cloth and have been watching your videos again for newbies because I am a newbie to the Zo. I packed up all my measuring cups :) just gonna start weighing everything out. Its 8:22pm so its a tad late to start this white bread tonight but will as soon as hubby goes off to work in the morning. I want to do the first loaf in the pan and then I want to do in my oven.
I have the same machine, Thankyou for your video. One thing though is someone told me never put water in the pan when it's hot as this will deteriorate the oil seals around the mixing posts the paddles go on. If the seals go you'll get black oil in your dough. Eventually the posts will seize up and the paddles won't turn. This actuslly happened to me on a cheaper machine that was also a double paddle machine like the Zoji.
I Really appreciate your details and step by step information. I don't have your bread machine but I found my older bread machine and want to try it out again. I've been learning how to make bread by hand this last year. I don't have a stand mixer either. So if I can have the machine mix and knead my dough, that will be great. Thanks for explaining everything so well, because the book that comes with my bread machine doesn't have details at all. There's not even an option to change the setting once it starts. I really hope my old bread machine turns out a loaf as great as yours! ❤
Best of luck!! By the way, I have a website now! All my recipes and videos are there and there’s a contact page for if you have questions! EllensBreadMachineRecipes.com
@Bread Machine & Baking Videos with Ellen Hoffman Thanks so much for the reply. Also thanks for explaining the powdered milk, and that I don't need it and can use regular milk. I also only have active yeast, not fast acting. I guess I should bloom it first in water and not just put it on top of the flour. I'll check out your website too. I'm happy I don't need to buy store bread anymore. I try to do everything homemade.
@@jwm4ever you don’t need to proof yeast if using a bread machine. Buy the SAF instant yeast and keep it in an airtight container in freezer. Don’t buy anymore active dry yeast!Saf Instant Yeast, 1 Pound Pouch a.co/d/81RV5fg
@Bread Machine & Baking Videos with Ellen Hoffman I just bought a huge package of Active Yeast at Costco, and 10 lbs of AP Organic Non bleached flour. I'm sure it will work. I can't believe how many different bread recipes and methods of kneading there are on UA-cam. It makes my head spin! I've been lucky making it by hand so far. One thing I did learn that makes a big difference in taste, is to refrigerate the dough overnight, really increases the flavor of the bread. Also, sometimes making a Poolish that ferments overnight. I might end up using the bread machine for just the dough kneading and raising, like you do. I'll see how it goes.
Only this blogger said how the Zojirushi BB-PDC20 really fanction. I bought this bread maker. So, I added everything in and closed lid, choose cycle #1, pressed Start, waited 1h30 minutes and machine was not working, was cold as dead turkey. Checked all videos and did not know whats wrong??? I repeated it several time and did not know that wait time is only 10-15 minutes. I will exchange machine. Thank you for good and explaining video!
Suggestion about cutting olives. I bought on Amazon a hard-boiled egg slicer. When I'm making an olive salad I drop my eggs obviously with the a chopper I do it for a long way too short ways so that really dices it up nice then I take my olives user the green ones and I do the same thing chop them up using the egg slicer does a great job makes life easier easy to clean to thank you for your video
Great, informative video! Thank you! I have pretty much mastered my recipe for my everyday bread. I have the Zo Virtuoso and use Becker's Homemade Setting and her recipe. I want to start using other grains and would like to know for a 2 lb loaf in the Zo what would be a nice recipe with some mixed grains. I have EInkorn, Spelt, and Millet as well as my hard red and hard white berries. I mill my own grains. So what grains would you suggest and what ratio of them as well. I will be thankful for any help you can give me. I am ready to start "spreading my wings"!
@@ashrei7777 I am unfortunately not knowledgeable about fresh milled grains. The ratio I use of flour to liquid in general is 300g liquid to 540g of flour. I believe fmf requires more hydration though.
Thanks for this video! I just got my first bread machine and the instruction booklet is unclear on some things. Plus I didn't know whether I could leave out the milk powder or substitute something else for it, use salted butter, etc. My first loaf was an abysmal failure LOL, but this video answered every question I had. I’m ready to try again!

Hi Ellen, Great newbies video, thanks. I have just started baking bread in the oven and was looking to buy a stand mixer for the kneading as arthritis in my hands was resulting in poor kneading and average results at best. Madame, mentioned her late mothers forgotten bread maker stored in the basement. UA-cam provided a few recipes with average results and then I found your video this morning and made a loaf immediately with almost great results. My basic white program is 3hrs 10 sec long. There is no rest/preheat portion for white bread. I paused the program for 25 minutes during final rise as the loaf was a bit flat compared to yours and I ended up with a loaf that really needed just a little more cooking time - it was just a bit doughy in the center - otherwise really nice with crunchy crust. I want to try another tack so can you please tell me the approximate times that your machine allowed for the initial rest period, kneads, knock back and rise times and bake time so I can see if I can match another program or just use the dough program and bake it in the oven like you do. If I did use the oven what temperature do you recommend? FYI My machine has the following program for a 2lb loaf (1kg) Knead 1 - 5min, Knead 2 - 20min, Rise 1 - 20min, Punch Back - 10s, Rise 2 - 24m:50s, Shape - 15sec, Rise 3 - 49m:50s, Bake - 50min. 3hrs:10sec in total.
The rest time is anywhere from 25-35 minutes depending on your climate, humidity, etc. mine is consistent at 23 minutes before it starts kneading. One of my Facebook friends made a chart that I may or may not be able to copy and paste here. The easiest way would be to invite you to my private, hidden Facebook group if you’re on Facebook. My machine does not give super definite times in the manual. I could take a picture but can’t insert one here. Are you on Facebook? Please send me a private message to Ellen Walker Hoffman.
I am going to start with this recipe. My Z is wiped down and ready to go. I have downloaded and printed the recipe. I now have an Ellen Z recipe folder
ah quick question high fiber lo gi bread i get from bakers delight here in oz nephew loves it but its pricey so i got a cheap breville bread machine and trying an oat bread recipe namely this one oat bread This oat loaf is a high-fiber and high-protein bread that is perfect for breakfast or lunch. It's made with whole oats, which makes it a good source of fiber. This bread is also low on the glycemic index. What you'll need: 1/2 cup steel-cut oats 2 cups water 1 teaspoon salt 2 tablespoons olive oil 1/4 cup oat flour Instructions: 1. Preheat the oven to 350 degrees Fahrenheit. 2. In a pot, bring the oats and water to a boil. Add the salt and olive oil and mix well. 3. Remove from heat and let sit for 10 minutes. 4. Pour the mixture into a blender and blend until smooth. 5. Pour the mixture into a loaf pan and bake for 30-40 minutes. Bread doesn't have to be off-limits when you're trying to minimize blood sugar spikes. With these high-fiber recipes, you can enjoy a delicious and healthy slice of bread without worrying about the effects on your blood sugar. Give them a try and see for yourself! is there anything i neeed to look out for in trying this recipe in a bread machine
This is not going to work in the bread machine. You would still have to do the whole thing, pour into the bread pan, and figure out how to just bake. The bread machine is primarily for yeast breads.
Thank you so much. Gay from Apron Strings recommended your channel. I’m thinking about getting this machine unless you think I should start with a different machine.
I absolutely do not think you should start with a different machine! You’ll never be sorry if you buy a Zojirushi, and the best currently available is the Virtuoso Plus! The most important features are: two paddles, horizontal bread pan, and the rest/preheat cycle at the beginning. Because of the rest cycle there is no need to warm liquids, soften butter, etc. Cold ingredients go in straight from the fridge, and yeast right from the freezer!

I made your white bread today with SAF yeast. It turned out beautifully. Can you please send me a link to your website. I am 83 years old and do all of my own cooking and baking. I’m hoping to learn to bake the bread in my kitchen oven.
Hello, based on the end product I was excited to try this white bread recipe. I’m not new to using a bread maker as I make my keto bread, however my bread didn’t reuse much and was a bit dense. I followed the recipe on the website for the “bread maker” version but noticed that’s not what you listed below that you used. So now I’m inclined that the ingredients were under… you may want to update the link but please let me know if I misunderstood. I read the instructions above the first set of measurements then noticed the second set (which I used). Also what (lb) did you use for this recipe? My bread maker can do 2lb, 2.5lb, and 3lb. Thank you for your help and feedback.
Hello, I’m sorry for the confusion. When I made this video I used the white bread recipe from the Zojirushi manual. In my family we don’t eat plain white bread, so I hadn’t created my own recipe. The recipe I used in the video was the one listed in the description below the video. You always have to click below the video to see the description for the link to my recipes on my website. However, as I explained in the description, later on I created my own, far superior white bread recipe. That’s the recipe you get when you click the link in the description. When you go to that link I have two sizes of my Soft, Fluffy White bread recipe. The two pound size baked a bit too big for my two pound max machine. It wasn’t a problem for me since I normally use the dough course and bake in the oven, but other people who bake it in the machine needed a slightly reduced version if they were baking it in the machine. Since you have a bigger capacity machine, use the first, bigger version you get from clicking on the link to MY RECIPE. Here is it for you to make it easier! ellensbreadmachinerecipes.com/recipes/Ellen%E2%80%99s%20Fluffy,%20Soft%20White%20Bread.pdf
Thank you for the explanation. I understand now…. I will try again. Surprisingly bread when cut was soft and crusty. I didn’t add enough salt to taste, however with the explanation I will try your family recipe listed first at either a 2.5lb or 3lb. Thanks again. I will report back😊

@@conniephillips840 I’m not at home so I can’t look. I wouldn’t use timer for anything because it means you won’t be checking your dough consistency at 5 minutes into kneading. I would say there is a75% chance of failure.

How is your baking going?

@patkeys3652 I’m so glad you like it! Funny thing about that recipe. I never made, bought, or ate white bread growing up or now. I couldn’t understand why anyone wanted to make it. I tried all the popular white recipes and they had no flavor. My bread friends kept begging for a white bread recipe that had the soft texture but also had flavor. That’s the genesis of this recipe.
It is fascinating to know that the rest temperature brings everything to the correct temperature! I have been using the microwave and an instant read thermometer! Great info! Thank you!

Hi Ellen,
I just subscribed. ❤

I have the same machine, Thankyou for your video. One thing though is someone told me never put water in the pan when it's hot as this will deteriorate the oil seals around
the mixing posts the paddles go on. If the seals go you'll get black oil in your dough. Eventually the posts will seize up and the paddles won't turn. This actuslly happened to me on a cheaper machine that was also a double paddle machine like the Zoji.
I have never heard that but my bread pans are rarely hot. I usually make just dough.

@@jwm4ever yes, but not for bread machine breads! Is your flour bread flour? All purpose is more for cakes, cookies, pie crust, etc., not bread.

Great, informative video! Thank you! I have pretty much mastered my recipe for my everyday bread. I have the Zo Virtuoso and use Becker's Homemade Setting and her recipe. Hi Ellen,
Great newbies video, thanks.
FYI My machine has the following program for a 2lb loaf (1kg)
Knead 1 - 5min, Knead 2 - 20min, Rise 1 - 20min, Punch Back - 10s, Rise 2 - 24m:50s, Shape - 15sec, Rise 3 - 49m:50s, Bake - 50min. 3hrs:10sec in total.
Hope yyou can help.
Cheers, Peter
The rest time is anywhere from 25-35 minutes depending on your climate, humidity, etc. mine is consistent at 23 minutes before it starts kneading. One of my Facebook friends made a chart that I may or may not be able to copy and paste here. The easiest way would be to invite you to my private, hidden Facebook group if you’re on Facebook. My machine does not give super definite times in the manual. I could take a picture but can’t insert one here. Are you on Facebook? Please send me a private message to Ellen Walker Hoffman.

ah quick question high fiber lo gi bread i get from bakers delight here in oz nephew loves it but its pricey so i got a cheap breville bread machine and trying an oat bread recipe
namely this one
oat bread
This oat loaf is a high-fiber and high-protein bread that is perfect for breakfast or lunch.
It's made with whole oats, which makes it a good source of fiber.
This bread is also low on the glycemic index.
What you'll need:
1/2 cup steel-cut oats
2 cups water
1 teaspoon salt
2 tablespoons olive oil
1/4 cup oat flour
Instructions:
Let me know if you have any other questions.

I love your setup!! The recipe books on the display!! So 😎 cool! You used tap water?
Thank you! Yes, just tap water.
Please provide a link to your soap dispensers. I loved your video. It was so informative. Thank you. You have a new subscriber 💖
Funny request! I use this kind now. I had another before. This is better and batteries are easier to replace.Automatic Soap Dispenser, PZOTRUF... www.amazon.com/dp/B09NVGSSC2?ref=ppx_pop_mob_ap_share
Do you have a recipe for banana bread in my Zo bread maker? thank you your recipes are the best!
No, I’m sorry. I only make yeasted breads in my Zojirushi as quick breads over mix and underbake. Good luck. Thank you! It takes less time to mix by hand and bake!
Love this video. Been having some trouble lately. Can you tell me how you. Store your bread
Yes! I cool it on a rack 2-3 hours, slice it, and bag it. Then it goes into the freezer. Watch this video. ua-cam.com/video/wyuQou3JYZk/v-deo.html

Ellen, thank you! I have learned so much from your videos. Your basic white bread is delicious. Do you have a sour dough bread recipe?
Hi Sheila. I’m so glad you like my videos!
I’m sorry, but I do not make sourdough. I tried a few years ago and I couldn’t stand the feeding and discarding of the starter. It was so sticky and messy and stinky. It smelled like vomit to me! Best of luck!
@@BreadMachineVideosWithEllenH Thank you for answering my question! You are awesome.
@@sheliaking298 thank you! Good luck!
All I have is active yeast, not fast rising. Can you use this kind of Yeast? Your bread looks so good.
Try it. It should be ok but I highly recommend instant yeast.Saf Instant Yeast, 1 Pound Pouch a.co/d/j8tcUyj
I too am a big fan of weighing in grams. So much easier
I know!!! I have converted a lot of people!
Great video. I don't have that bread machine. Reason I have bread was to make low carb bread when I was in low carb diet. Now I want to make bread with it but I am flunking.
I live in Arizona and its pretty dry. My bread that I have make just doesn't look good or taste good. I am going to try King Arthur flour. Do you purchase it at their website? Have not seen it in any store around here.
My question is maybe I need more liquid? I do have a weigh scale with gram so I will use that. It seems a lot things are in metric now.
Thank you for the video.
You will likely have to add more liquid to your recipes. Learning how to read your dough is important! Please watch the videos in this playlist and it should help. Let me know if you have questions.

Thank you for your kind words. I’m here for you!

Thank you for the explanation. I understand now…. I will try again. Surprisingly bread when cut was soft and crusty. I didn’t add enough salt to taste, however with the explanation I will try your family recipe listed first at either a 2.5lb or 3lb. Thanks again. I will report back😊
@@BreadMachineVideosWithEllenH it worked! Tried your recipe again for a bigger loaf worked (using the first listed measurements). ♥️💕 thank you again
Fantastic!
I'm full of questions today: WHY are the Honey bread and the Raisin Bread in the recipe book numbers 3 and 4 not compatible for timer? Butter is the only perishable item and you can leave it out on the counter... Will be trying my first loaf in a few minutes. Thank you so much for all your wonderful instructional videos.
@@conniephillips840 I’m not at home so I can’t look. I wouldn’t use timer for anything because it means you won’t be checking your dough consistency at 5 minutes into kneading. I would say there is a75% chance of failure.
@@BreadMachineVideosWithEllenH Dear lady, I think I have figured out my own question.. I'm working on my first loaf of bread and so far I'm in love with this machine.. At the age of 71 I'm wondering why I waited so long to make this purchase...
28:45 this is the exact reason I don’t bake. I can cook all day.
What happened at that time? Can I help?
Thanks
