Liebe Maria, ich habe dieses Rezept jetzt schon ein paar mal gebacken und finde es sehr, sehr gut. Bisher hatte ich noch nie ein so tolles Ergebnis. Nun würde ich abr sehr gerne glattes Dinkelmehl (kein Vollkorn!) verwenden, weil es für mich bekömmlicher ist. Hast du Vorschläge wie ich ein gleich gutes Resultat erhalte, vielleicht mit mehr Flüssigkeit? Ich wäre dir sehr dankbar für einen Ratschlag! Übrigens, ich schaue von Wien, Österreich. Liebe Grüße!

Please explain. You said boil water but not hot. What does this mean? Use warm water? Or boil the water and let it cool down then use. What kind of water is used?
Boil the water and then let it cool to tepid temperature. Very hot water will kill the yeast. I use tap water and boil it in my kettle.
