    Morning Niki, this looks super delicious and nourishing - a bowl of comfort! This is always most welcome, our winter is now starting, today all foggy as we had much rain during our weekend and yesterday, I could enjoy this right now.     I only found your channel recently & so pleased I did. So far I’ve made Chicken Alfredo Pasta Bake, Gnocchi with Chorizo & Creamy Harissa Sauce, & this Simple One Pan Bolognese Pasta. Love your recipes - uncomplicated & easy to follow, they contain ingredients that I already have, & the results are always delicious.     I made a big pot of this, i didn;t have milk but it was still thick and tastey. I used ground pork, beef and italian sausage. It was so flavourful, i ate it with 2 piece of bread, i am going to be eating for the next 2-3 days!

    Hi Nicky! I tried your Gnocchi with Harrissa & Chorizo last week, and it was a hit with the family. So velvety and heart warming. Our first time trying Gnocchi believe it or not. I will definitely be making it again as it was quick and fuss free, which I like. Please do some more Gnocchi recipes. I was excited to see this and I’ll be adding it to the meal list.

    Great idea, but I would recommend to roast the tomato puree thoroughly, to give umami and reduce the acidity of the purée! Will definitely try this lovely looking recipe!

    I can't think of a better meal for a busy mum to cook on a school night. If the children all eat an appropriate size portion, no one would need anything else, until breakfast time!

    Those sauce is incredible. Pasta sauce is usually missing something but I can never pinpoint what it is, but this one is the perfect recipe.

      I finally did your recipe today, and I am enjoying it right now, and as promised I tell you that is very nice and tasty.
      I used for pasta, Orechiette by Barilla, and I made a couple of changes from your original recipe, that were:
      - I do not like chedar cheese, so I used emmental french cheese that it is very tasty and soft, and
      - instead of adding as a topping chilli flakes, I preffered to use a couple of italian oil peperoncini picanti cooking them at the same time than the garlic, and the final result was yummy!!
      Thank you for your recipe, and if you think my changes may be interesting, the next time you will cook this pasta recipe try to use them and give me your opinion!!

    I batch cook my Bolognaise and similar sauces and freeze in portion sizes. I sometimes serve with Spagetti but mostly with Penne and the curly ones. I have - so far - always cooked the pasta separately but I think I will try and cook it in the reheating/simmering sauce.
    I belive this will give me something very similar for a one person version and I am due another program of frezzer re-stock with Bog-Sauce, bought the ingredients the other day.

      Look at Aldi & Lidl they often sell these type cast iron pans. Yes they have an enamel coating.

    Can I just add one comment and I know I am new to cooking but other people will be when you talk about minced beef and adding it straight to a recipe maybe it would be a good idea to mention if it's 20% fat 12% fat 5% fat because I have made the mistake of cooking Bolognese and shepherd's pie with 20% fat and it has come out really really greasy and nasty now I only use 5% lol

      I would agree that 20% fat makes it too fatty a dish. I use 5% steak mince and it seems fine to me.

      Thanks for the feedback. Typically i'll use 12% or 5% (or thereabouts) mince for most dishes. 20% is a must for burgers though 😋

      We got it from Amazon but it doesn't appear to be in stock any more. It works fairly well but can be a little too hot on occasion.

    Why, in nearly every recipe do you add milk/cream/creme fresh? I can't stand the stuff, it literally makes me puke. I'd rather not have the cheese either. So could you come up with some dairy-free alternative recipes, please?

    A bolognaise ragu takes hours to cook, not 30 minutes. Please do not use the name of the real sauce in vain, as it isn't even close to the actual. Also, a proper bolognaise ragu is served with pappardelle or tagliatelle, and certainly not spaghetti or other pasta shapes.
