Where do you get springform pans like that? Mine have small divots in the bottom piece.
Also would it be possible to cook in an instant pot?
You should be able to get them anywhere, just check out the bottom of the pan before you buy it to make sure it's smooth.
And you should be able to use an instant pot, but you'd have to reduce the recipe by about 1/3 and adjust the cooking time. Without trying it, it's hard for me to advise on the time.

The recipe on your site doesn't include how much lemon to use for the filling, but you note to add lemon juice in the filling. How much lemon juice is recommended for the filling?
Yes, it't there - 6 tbsp (90ml) lemon juice. It's the 5th ingredient in the list for the filling. I hope that helps!

Yes, that should be fine.

I don't. I don't think I'd recommend tissues - they'd probably fall apart easily. If you wanted to try something like that, I might use paper towels.
