Calcutta Chicken Rezala-just like Mughlai restaurants

- This is not a homestyle Calcutta rezala recipe. This is a no-holds-barred recipe-be it in the amount of oil or ghee, or the number of steps required. Our only goal was to make it as close to the restaurant-style rezala as possible.
We have been looking for a reliable rezala recipe for a long time. All the recipes we tried from the internet or books produced a rezala that tasted delicious, no doubt, but they were not close to the rezala that is served in Mughlai restaurants in Calcutta. That style of rezala is watery thin, yet rich, flavourful, pearl-white rezala with good centimetre of oil floating on the top-the kind served in Mughlai restaurants in Calcutta, such as Sabir, Aminia, Shiraz, Royal, Arsalan and the likes.
So, just like the kochuri alur torkari recipe from 2018, for those of you that remember, we went about reverse-engineering the rezala recipe.
The first step was to taste rezalas from all of our favourites. We tasted them side by side. Then sometime last year we came across this video by Mr. Nadim Amin, one of the owners of Aminia-sadly he passed away a few years ago, but you should definitely check out his channel. His video acted as the starting point for us. We cooked many, many batches, varying spices, cooking methods, using boiled onion vs raw, with and without poppy seeds, cashew, dry coconut-for several weeks all we were eating was rezala-until we arrived at this recipe which I think we are happy with. can we use fresh coconut instead of desiccated? if yes, what would the quantity be?
If you can’t find khopra, skip it. Not going to make a huge difference.

That shot of the blender with milk and chillies together... literally brought tears to my eyes. When THEY can coexist harmoniously, WHY CAN'T WE???!!! Sidenote - The bubbles we see at 7:05 may or may not be because of the silicone spatula, when I stopped using the silicone spatula, the excess bubbles I used to get while frying onions went away.

I have some intensely fond and loving memories of going with maa to buy Biryani and Rezala from a local biryani place in Asansol. Whenever we went there I just knew it was going to be a good day because biryani and rezala was for celebrations, good times or just a gentle pick me up when any of us needed it.
Even though I’ve moved and lived in 3 different countries far away from the lanes and by lanes of Asansol …To this day this is the ritual I follow to celebrate, to rejoice, to lift up a dull day

Having enjoyed Rezalas at many Kolkata restaurant, this recipe really comes closest to the real deal. At home, we'd cook Rezala basically using the technique shown, taking some short cuts. Instead of green chili juice, we'd use white pepper corn powder for that heat. Can't wait to try this folks!

This is such a service to humanity!! I have been looking for authentic rezala recipes forever, and as you said, there were none so far on the internet. Even more interestingly, rezala is a dish that is made very diffrently in Bengal (Dhaka/Calcutta) and also in Bhopal, as part of the dishes of the nawabi repertoire. The Bhopali rezala is also white but has coriander, is not sweet, and fits into the qaliya description perfectly. Since I have lived in Bhopal all my life but I am a Bengali, I am extremely excited to see this recipe and to try it out. Thank you so much, Bong Eats!

This has been always my favorite chicken dish and nostalgic for me.. chicken/mutton rezala and tandoori roti at Sabbir with my parents. Shiraz and Aminia for biryani and chaap. I tried making rezala but never tasted the same. Definitely try this recipe with my son, who is also a huge fan of rezala.

thank you man for revealing the hardship of decoding the dishes we like to eat , though these are not made with rocket science but these processes are really hard to decode and takes too much of effort in doing it, many food lovers just leave the process halfway because of this ,for me when i tried to decode a simple east bengal dish from my mothers secret cooking recipes ,i left no stone unturn but i could not succeed. kudos to your hardwork, love n respect.
