A "Crémeux" is a classic French Pastry recipe that combines a traditional Crème Anglaise (pouring custard) and Chocolate. "Crémeux" means "creamy" in French, and that is simply a great way to define this frosting. It is stable enough to pipe but soft enough to be use as a filling or a dessert.
Ingredients :
3 Egg Yolks
150g Whipping Cream
150g Whole Milk
15g Sugar
150g Dark Chocolate 74%

trying this recipe to layer my son's chocolate birthday cake. I hope it makes the cake even better than it usually is. I didn't have top quality chocolate but I used what I had on hand this time.

How much time we need to rest it before scoops? (Rest in room temperature or freezer ) ?
Rest in the fridge / refrigerator (not in the freezer) for at least 6 hours
Can this be frozen?
I haven't tried putting it in the freezer yet
