    Heat dairy before adding sugar to eggs. Eggs should be exposed to sugar for least amount of time before adding dairy as the sugar "burns" eggs through humectant extraction.

    If I use milk chocolate do I have tp change the recipe? Bc Milk choc has less cocoa mass

    Hi, would it be possible to do a 50/50 mix of raspberry puree + creme anglaise to make a raspberry chocolate cremeux?

      Hi Maggie, It should work as an insert or filling to an entremet or dessert, but for piping you might need to adjust carefully to get the right texture. You may need to add more chocolate or a bit of gelatin to stabilise the mixture.

    I halved this recipe and it turned out runny. Is that because I halved the recipe

    Bro theres a mistake of measurement in your recipe, maybe the milk, i just wasted some ingredients, bettter edit it before someone make it wrong again

      I saw it right away! The milk has to be the small part and cream the big part of the recipe. On the video it’s correct. In the recipe it’s not. Just find another recipe maybe?
