If your electrolyte mix has calcium in it then that would have reacted to the sodium alginate causing it to gel. Selecting your almond milk for chocolate noodles is also important. If it is fortified with calcium, it may not work (depends on how much calcium is added). To gel calcium products, you need to add the calcium lactate to the food and put the sodium alginate in the bath water. This is not a good solution due to the carb count of the calcium lactate.
You are 100% correct!! I just checked and my electrolyte powder does have calcium in it 😆
I had not even considered that, but of course it gelled instantly, lol. (forehead slap)

I've seen Anna at Keto Asian Flavors using hard boiled eggs instead of yolk powder so I wanted to try using avocado as the base. Hopefully it will work and will give me some fat in my noodles instead of just protein

The "failed" gelatin mixture looks a lot like the jellied cranberry sauce traditionally served at Thanksgiving. Maybe a keto version could be made with cooked, strained, and sweetened cranberries using the sodium alginate!
Maybe! But I'd probably go the cheaper route and use unflavored gelatin for that 😉
This was fun! :D Those worms need to be done somehow. You just have to figure out, how.
Now I wonder... Looking through your repices I can see that you always put 1 tbsp Sodium Alginate to 3 cups liquid and (usually) get a pourable & squeezable result. I follow Asian Keto's recipe to the letter, adding two tbsp Sodium Alginate - and end up with the weird jello texture. :( Up until now I thought that I always fck up something - but now I think that next time I'll just add 1 tbsp of SA...
I saw Steve at Serious Keto only used 1 tablespoon of SA and decided to go with it to save money 😂 Definitely give it a try!! 😁
@@HealthyAmbitions It worked! I used 40 g whole egg powder and 1 tbsp Sodium Alginate. At first I was worried that the mix was too thin, but after 30 minutes it thickened just the way to be still nicely pourable.
(Earlier I tried to make the noodle with egg white powder and 2 tbsp SA - the result was like your jello, only white in colour and a bit marshmellowy. :D )

Wowzers... I wonder if you use the dark chocolate powder for the Oreo would make it more chocolate tasting 🤔?
Dark chocolate powder definitely gives a richer chocolate taste, but I sometimes also add espresso powder in recipes to really amp up the chocolate flavor 😀

It seems like that would work, just skip the gelling step....I would want to add more flavor though for a pudding :)

Because there is carbohydrates in the calcium Lactate, has anyone gained weight from using these. No one seems to know for sure if the noodles absorb the calcium lactate.

This tells me that most of it is probably not absorbed. If it had been, she would not have been able to use the calcium bath a second time.
Of course, this begs the question....how many batches CAN you make with a single calcium bath 🤔

Yes! I'm thinking I'll keep the xanthan gum in a few baked goods recipes, but definitely ditching it for sauces and gravies 🙌

Chocolate noodles aren't all that unusual. Back before I did keto, my pasta maker had a chocolate noodle recipe in the included booklet. Add a little chocolate sauce next time with the whipped cream!
Interesting! I'll have to do a little research on that. I think I'll still need to look into flavor extract, but if I remember correctly, Modernist Pantry sells flavor extracts. Time to go shopping! LOL

I should have left it in the video because I actually tried using the batter immediately after pulsing it in the blender, not allowing the 30 minutes to set up, and the liquid basically disintegrated in the calcium bath, lol

Maybe try the Dark Cocoa powder.

Making “food worms” with sodium alginate and a calcium bath predates Ann’s keto noodle recipe by many years. However, I did give a shout-out to Ann and linked to her video along with several other resources in my description 😉
