Mr. Ralph if I may suggest if you brine your chicken it's so much better! Just put your chicken in a pot large enough for the chicken to be completely covered in water, add a 1/2 cup of your favorite seasoning and let it sit in the fridge till the next day and then use it. They got two ways to cook shrimp in a gumbo, either in the beginning and simmer it for a while or at the end and simmer it not that long. But that produces two different results. The gumbo with the shrimp in the beginning will have a deeper shrimp flavor and the shrimp will be a fall apart feel in the mouth (because it will become tender then tough then tender again). The other way will have a less pronounced shrimp flavor (but will play catch up overnight when the flavors marry) and the shrimp will be more bouncy and chewable in the mouth. It just depends on what mouth feel and flavor you like. I’m from south Louisiana and been cooking gumbo my whole life.

At first when you put in just the meat, I was like "oh hell naw, no roux?!" But then you got the roux going with some trinity and spice and everything looked so damn good!! Mad props for not forgetting the bay leaves. I don't use filet powder in mine, but I thicken my gumbo with okra (boiled until they fall apart and thicken). I use canned okra because they melt into the gumbo better. Question: that didn't look like instant roux, more like a dark roux paste. Is there a name brand? Or did you make it yourself?
