that kinalas looks delicious, but maybe you should try beef mask/beef cheek. the reason why it's called "kinalas" is because after you boil the cow's head/mask, you "kalas" (detach) the meat from the bone/skull, and that's the usual meat we use in kinalas. :)
yes agree completely! Face can be hard to find in supermarkets in Manila, so just switched it out with Short Ribs, so that there is still that bone element :)
