I made it on Thursday, I followed your recipe however, I added 4 carrots and 4 celery. I love a lot of veggies in my soup. I make many soup/stew recipes and I have to say this was my best soup/stew that I have ever had. This is going to be my go to soup/stew. I will be making it for many families this winter. just want to say that i’m not a very good cook at all, but the other week i decided i wanted to try and make a chicken stew and my boyfriend (who is normally the chef of the two of us) said that he wanted to try a beef one. so he made the beef first, and then today i made this chicken stew. oh my god, i’m a really basic cook, i can make stir fry and a bacon and eggs sandwich that’s about it, but this is delicious. such an easy to follow recipe, i’m still sitting here with a bowl as i write this! thank you, i never would have thought i could make something this tasty!
Great recipe, I made it and came out fantastic! Tip for those following: the only thing I changed was to not debone and cut up the chicken before the 45 min cook. Keeping it as bone in will keep the chicken moist and add more flavor to the stew, as the cartilage breaks down. You can then remove the thighs at the end of the cook and shred them with two forks, removing bones and adding the chicken back in. Thanks for the video, it was amazing!

BTW I'm a senior n always prepared and froze soups, etc for my husband. He has recently had brain surgery and is now in nursing home. I just pulled the boneless skinless chicken thighs out of the freezer to thaw for tonight. I wasn't quite sure how I was going to make them yet but then this video popped up and now our dinner is planned! I might add some dumplings as well. 😊 thank you!

Made this tonight and my picky child, even though he said it had too many carrots and is not a fan of potatoes, said it was GOOD. Cleared his bowl. Now that is saying something! I thought it was very, very tasty and super easy.
I put the bones from the thighs into the pot to simmer with the potatoes and chicken pieces. It gave the stew even more flavor (of course I took them out before serving) this is a terrific stew! Thank you for sharing with us. I will be making this a lot over the cold Northern Maine winters!!
We make Chicken stew in similar way but instead of adding flour we use thick coconut milk which makes the recipe creamy. Those who like the taste and flavour coconut milk will love it 👍
Exactly the recipe I wanted. So yum! And I love that you mention growing celery. I do too and yes, it needs watering almost every day but the flavour is so well worth it. I also blanch and freeze it for winter use - small bits for mirepoix and large chunks for stews. Thank you for this excellent recipe.
My husband and I are empty nesters, and we make a large pot of chicken soup every week. We add lots of veggies. Before we serve it, we add cooked cauliflower rice to the bowl first, then add the soup. It is a yummy way to eat low carb, but still feel like we are eating comfort food!

I think ppl who say they don’t like dark chicken meat have been served thighs at 165F whereas 190-200F is superior texture. 165F thighs are nasty rubbery
I had a chicken thawing and I wasn’t sure what I want to make us finally autumn 🍂 meaning its officially cold out rainy drizzly weather just want to cuddle up and watch paranormal 👻 caught on camera, 54F and drizzling. I added cumin to the chicken in the crockpot. And added tomatoes 🍅 from the garden 🪴

Hi tonight Sunday I made your chicken frickassee. I used to make it with herb dumplings in the 70s. The chicken was delicious. I used honey butter bisquits . Its just me and the dumplings don't make good left overs. In those days I didn't use cream. I did tonight and I used half TBS thyme and half TBs rosemary. It was fabulous. Thanks for helping me make an oldie but a goody.
Try adding some drop in dumplings a few minutes before you want to serve it. My dad always did this and they were a nice addition to any soup/stew (Mainer here).

When I'm sick I boil the chicken in broth with salt and pepper instead of browning it, and I don't let the veg get any color when I sweat them. To thicken it, I'll smash about 1/3 of the potatoes when they get done instead of adding flour. It has really simple flavors and is good on a sick belly.

Easier option....Irish style...Boil the chicken.....add the veg of choice...a stock cube....blitz a bit of veg for thickening....add milk or cream optional or coconut cream. Job done....No need to be frying the chicken. 1 hour 20 minutes start to finish but tastes better the next day.

In Australia, a stew is a casserole so that’s what I thought I was watching a recipe for. I did think it had a lot of stock for a stew and I was interested that you didn’t finish it in the oven. It took me until close to the end to realise that this was in fact a recipe for soup! Regardless, looks delicious and I’ll definitely give it a try!

Great recipe mate tried it tonight the only changes I made was adding some white wine anf largely chopped field mushrooms, also I did't have the bay leaves however the fresh thyme and fresh parsley along with good quality chicken stock and cracket black pepper makes this dish a clear winner. Funny I made a chicken stew with a very similar recipe tonight in my instapot and it was delicious the whole family loved it and it will be definitely added to my favourite recipes .
I skipped the parsley, thought about adding cilantro but maybe next time. I made some white rice and added to each plate and this was just wonderful. I’ll need to add more veggies next time.
I made this yesterday, perfect for a cold day. I added small amounts of beans, lentils and quinoa to increase the nutritional value.

Made this tonight. I used slightly more flour and slightly less stock for a thicker stew. Was perfect. Do not skip the herbs here! Great recipe.

I made this recipe and added yellow, red bell peppers, some ginger and used sweet potatoes instead and omg it’s so delicious… chef kiss🧑🏽🍳
This is just how I make my chicken stew. A family favorite! The only difference is that I generally add in some green beans. Love it!

If your wine is white you can deglaze your pot with a cup of it to bring the soup to another level.
