Chicken Stew FOR THE SOUL!

- This is a rich chicken stew that tastes just like a Sunday roast. Chicken thighs are simmered until falling off the bone and the cooking liquor is reduced until thick and gravy like, all before little clouds of chive & cheddar dumplings are plopped on top to steam and soak up the sauce. This is true winter food that is best served on the darkest of days.
Ingredients:
US:
1-2 tbsp oil
2 lbs chicken thighs, skin-on, bone-in,
3 celery stalks, trimmed and cut into bite size pieces
3 large carrots, peeled and cut into bite size pieces
1 large onion, roughly chopped
A few sprig of thyme, leaves picked
1/2 stick butter
2 tbsp plain flour
4 cups chicken stock, store-bought
Sea salt & ground white pepper
For the dumplings:
1 stick cold butter, cubed
1 & 3/4 cups cup self raising flour
A good handful of chives, finely chopped
1/2 cup buttermilk
1/3 cup grated Irish cheddar
Sea salt and freshly ground black pepper
Metric:
1-2 tbsp oil
1kg chicken thighs, skin-on, bone-in,

50g butter
2 tbsp plain flour
1 litre chicken stock, store-bought
Sea salt & ground white pepper
For the dumplings:
100g cold butter, cubed
225g self raising flour
A good handful of chives, finely chopped
100ml buttermilk
50g grated Irish cheddar
Sea salt and freshly ground black pepper

To all who commented ‘ oh this looks so delicious, must make it soon’. Run don’t walk and please make it! I was just so bored with my same recipes and wanted a delicious rib sticking meal. Got up early, bought all the ingredients. Was like Donal was in the kitchen directing me to something special . I am ready to follow more of his recipes as this was real food. I can never get over how lucky your wife is to have such a handsome man cook for her. My dad was like that, just portuguese and a little more serious but equally skilled and dashing! He is not longer with us, sadly passed away way too young, so I reminisce with your videos.
Love watching him, he actually cooks normal food that people have in their cupboards. Another one trying this at the weekend.

It might sound strange, but I think this dish would be a huge hit for Christmas dinner with my young grandchildren.
I think that's an awesome idea. I just finished watching the video in those biscuits on top looks so good. When I was a kid I loved it when my mom would put biscuits on top of her stews. Your grandkids will love it. Merry Christmas

Omg!! This recipe is amazing. I make it about twice a week my family can't get enough plus if you leave it in the fridge over night the chicken becomes more infused with all that loveliness. Thankyou xx

My oven broke recently and we haven't been able to get it repaired yet, so for Christmas dinner I made this stew! It was superb; I added in some mushrooms and used rosemary instead of thyme (as many members of my family aren't the biggest thyme fans) and we all loved it. So glad I found this recipe!
I love the no fuss with the dumplings and just pinching off chunks of dough (no rolling, etc.) Also, I love your white stoneware serving bowl. Looks so delicious! Thank you!!

I don't care if it's 100 degrees outside, I've got a craving for this delicious dish and I'm going to make it this week! This is Real comfort food...even more tasty than a beef stew. Chicken is SO flavorful and good.
The type of meal I grew up on.
If I can make a suggestion it's better to sweat your Mirepoix and seasoning with the lid ON, very low for around 10-15 min, untouched. You get much more flavour that way. Using that method you can make a soup out of just potato, onion and garlic taste out of this world! Smashing Pot, all the same!
I’ve cooked this a few times and it’s delicious. If you haven’t made it already just do it. I promise you it’s amazing. This is now a meal I cook monthly, it’s just so good.

I made this stew yesterday and it was fabulous! It was GF. I used corn starch for the gravy worked great and a GF multigrain flour to make the dumplings. My husband has been under the weather at 77 and he is still raving about this stew. I have a mammal meat allergy from chronic Lyme disease. I miss my lamb stew, beef stew, pork roasts. I am 76 and still love to cook. Donal this recipe is ‘a keeper’.❤️ Thank you❣️

Made this stew, and I didn't have buttermilk. Substituted it with yogurt and water and it worked fine. Beautiful winter dinner and the kids loved it too.

JUST MADE THIS.
RUN to the grocery store and make this for someone you love on a cold rainy night in. I added mushrooms instead of celery and added a cube of beef bullion to make this more rich in depth and flavour. Although I would add less butter next time, its perfect with some crunchy buttered bread and fresh chives on top.
I'm in HEAVEN.

I made this this evening and it turned out amazing! I like potatoes in my stew so I added five or six cut up quite small like the carrots. I had no celery on hand but had some celery seed so I used a teaspoon or so of that instead. Also didn’t have any bone in thighs but boneless. Cut those up to bite-size pieces. Other than that I followed the recipe to a t

Absolutely great dish and very easy to make. Substituted green beans for the celery, but otherwise made it exactly as recommended. My very fussy eater wife had it for dinner two nights running and lunch a further two days out. Winner.

Tried this last night as I was bored with normal chicken dishes and normally use chicken breast. It was absolutely delicious and I used skinless and boneless chicken thighs. This is now a firm favourite in our house, thank you.

This is how my grandmother made her lovely fluffy dumplings! I will even go and buy suet which is very hard to find in America and maybe a bit easier where I live in North New England. :-)
I have tried to find suet for a steamed Christmas pudding and you are right! It seems to be in bird feeders but not butcher shops.

O dear lord ! Made this tonight Tho it’s only 64f in LA. Husband loves a home cooked meal and this was it! First he said oh smells so good, then first bite oh it tastes so good ! So much flavor and so appealing I think for anyone . We will make this again, especially when the LA days do in fact get cold 🥶 ! Thanks Donal, had a feeling after I found your website , these were recipes any family would love . I tried to send photos but couldn’t figure out high lol! I made this yesterday. It turned out very well. I can definitely taste the fat in it. I probably added too much butter at the second stage and accidentally used too little buttermilk but it did come out very taste. Cooking the chicken took longer than I had hoped but it turned out great all in all. I was surprised how delicious it was. It's a great recipe! Thank you for doing the video on it.

Made this yesterday night and added five cloves of chopped garlic (which we first sautéed on medium for a bit), one inch of ginger Julian sliced, and replaced chives in the balls for finely diced red onions. Added paprika and Cayenne for Chef John. Then slow cooked the whole thing on hi for four hours. Turned out amazing! So much flavour!

Just made this recipe. It is delicious. Thank you! Our local supermarket did not have chives, so used one small very finely sliced green onion in the dumplings.
This chicken stew is so perfection !!!
Wish I could like this video more than once. This recipe is so so so so delicious! I actually seared the dumplings in a hot pan until its golden brown before finishing it off in the pot. And to the dumpling, instead of chives, I put flat leaves parsley and a bit of dill. And also instead of salt I added the parmigiano reggiano. Super tasty! Just make it, don't hesitate, totally worth it.

We finally got our first 40 degree (Fahrenheit) night in Northwestern New Jersey, USA!!! Fall finally decided to show up!!!
