Brian’s point about going from “I want to cook all day Saturday” to “where can I find the shortcuts” is super valid. I feel like it’s actually an overall change in people’s lifestyles. I was definitely in the camp of cooking all day but these days I want to maximize flavor and efficiency. Sometimes I want to make a several hour pork braise with home tortillas but a lot of times I want tacos start to finish in 20 minutes that are super tasty.
Well, his channel really started to grow during the pandemic when we were all home all day making super delicious food. Now that we're back in offices, it's back to quick convenience food.
Yep my personal Chef spends several hours cooking daily. Quick and easy is sometimes needed. My wife and I enjoy what they make and I help sometimes. We had chicken legs and thighs with sweet potatoes with honey roasted with fresh broccoli roasted then topped with a cheese sauce and to finish cream puffs.
It is. I think internet culture pushed the "best of the best" hustle culture in all areas of life for a while but people realized that they 1) don't have infinite time/energy/money for everything to be done optimally and 2) most people aren't the aficionados for food (or anything else) that they imagined themselves to be and that good enough was, in fact, good enough. While everyone still has niche hobbies they delve deep into, everyone else is trying to find that sweet 80/20 on the areas they aren't obsessed with.
I think these are all good point. I'll add that a cooking channel is going to find super-dedicated cooks as the early watchers. These are going to be a limited crowd who are basically going to be overwhelmed by the more casual audience once the channel grows. Eventually you get to the audience where the whole thing is just entertainment and they may never actually make a recipe on the channel. This change in demographic balancing may be perceived as a change in audience.
Mad props to Ethan for taking a break in his quest to destroy the One Ring to do this collab with Brian, who is taking a break from his duties leading Rivendell.
Ok, Ethan you need to make this into a regular video format: youtube cooks chilling in the kitchen. I really enjoyed the discussions you guys had that weren't even directly related to what you were cooking.
Dude.. you two are both my favorite food channels. I’ve worked in fine dining for 16 years. As a server, then home cook/enthusiast turned chef.. I love the stuff you guys do. Hopefully you guys can collab more in the future
I had serious doubts if it could be done in time with the first 5 mins being spent to chop half an onion because of chatting about cheesecake but I should have known this was an easy win. Also, I really enjoyed Ethan in the background at the stove with Brian in the foreground making them look like Gandalf and Frodo sharing a kitchen.
Well they're cheating a bit by using Uber Eats. Unlike when Gabe used to go out and get the food for these types of videos, the Uber Eats driver probably stopped at two other houses on the way to Ethan's. That's been my history with that service anyway.
Am I the only one that wonders why Brian threw away half an onion at roughly 5:15 ? Like he already cut off the root part and threw it away, and then proceeded to yeet half of the good part straight into the garbage. Am I missing something?? I am so confused.
@@chriswhinery925 Is it cheating though? Having a friend of yours try to go as fast as possible to go get you food isn't realistic either. Most of the time people are just going to get Ubereats/Doordash/Postmates. Though, they are always slow as hell and that's if you even do get your food. lol
Is it really that much faster? For me I'd need to drive 12 min to a tbell, probably 5 min there, then another 12 back. looking at about 30 min from start to finish before I can be at home actually ready to eat my food. I think if they weren't talking as much they'd have banged it wayyyyy faster.
Absolutely love the live format, keep it up! You do great work Ethan. Part of why i love the live format is because of how honest it is. Even Brian's mistake in adding too much water and slowly adjusting shows that you can make mistakes in the kitchen and find your way back to a good product.

This concept is sooo good! Too many of the home cook youtubers cut out the mistakes, but most of us just want to see how a recipe is cooked in the real world as well as how to deal with mistakes (eg Brian pouring out the excess liquid instead of waiting for it to boil off). Adding in the delightful discussion really makes this a great watch. I'd love to see a video on putting together a good dinner/brunch for friends (how to prepare ahead of time, how to entertain while people are there, and how to prepare things for the crowd). There aren't enough complete meal videos (entree with a side), most videos just focus on each individual thing but don't deal with how to make two dishes at once (what if both dishes need the same utensils or need the oven at the same time?).
Oh thank goodness someone else mentioned it too! 😅 Someone should make a compilation and check what percentage of this video was just them saying "like".

That was a very interesting discussion -- about perspective, attitudes, and principles -- where Ethan points out that its useful to go to the extreme so you can understand how to pare back (the 80/20 rule) and Brian notes the trends of people wanting more "fast" recipes. I think there are two types of people on the ends of a spectrum, those who are only interested in recipes and couldn't care less about the cooking principles (the recipe is the end goal), and those who are all-in on understanding the principles and dynamics (the recipe is only the starting point).
Great comment. I seldom use recipes unless it’s something I never cooked before and don’t know the flavor profile. I enjoy great cooking technique because it generates the best food. Understanding cooking technique isn’t something common; hence, recipe driven cooking. Even the small details of their collaboration was an acknowledgement that ultimately cooking knowledge and technique is truly what matters. I watch their videos for nuances in cooking technique which I happily add to my bag of knowledge.

I like how in the span of this series, home cooking has become insanely cheaper and faster than getting "fast food." So happy to see you two collab! I've been wondering when you were gonna do a video with Brian! Dunno if you've ever heard of Anti-Chef but I think you two would be great together too! He's a bit of a home cook too, and embraces a lot of the mistakes that happen while learning to cook at home! Your conversation with Brian about making everything look perfect made me think about his channel.
The most fascinating part about this was the both of you chatting about cooking, preferences, video creation, et al. The peek behind was great and very affirming for a home chef with some skills, but who never has the best gear or all my ducks in a row when making food. I definitely feel better about my commitment to keeping it real in the kitchen.

One of the things that's made me a fan of both Ethan and Brian's videos is how they really do make their recipes accessible for the homecook...like doughs without stand mixers or pizzas without specialty pizza ovens. What an awesome collab! I make one of the bread recipes from Brian almost every other week. Both your channels are helping to inspire me to cook (my fiancee and I are habitual slow-cooker people and only have about 6 meals we make outside of the slow-cooker).

I loved all the useful trivia that got dropped, I'd love to see more of these. In regards to the photography, isn't part of the issue that you're photographing actual food, whilst they're often adding things to look it good but inedible (like glue for a good stretch/hair lotion rather than milk for cereals to not get it soggy, ...).

Totally agree on that "vacation house knife" scenario. If you have a half decent knife at home that you occasionally run through a sharpener you are already the owner of a knife sharper than 90% of people out there, and it's such a quality of life improvement in the kitchen. If onions hurt your eyes when you are chopping them up then your knife isn't sharp enough.

I loved all the useful trivia that got dropped, I'd love to see more of these. In regards to the photography, isn't part of the issue that you're photographing actual food, whilst they're often adding things to look it good but inedible (like glue for a good stretch/hair lotion rather than milk for cereals to not get it soggy, ...).
I love how Brian wore his jean apron just like in his videos. The man stays on brand.
Great collab! I love Brian’s vids. I think he produces great recipes and hope he does more of the perfection stuff. The week nighting is great, but I’d agree that a certain amount of attention to the minutest detail is fantastic as well. Ethan, sorry about the garlic! It was a great video. I enjoy your deep dives as well as your every day cooking. Maybe you and Bri can do a collab on Balkan food which is popular in St Louis. I think it would fit well with both your styles. the thing about the mcdonald's burgers is i LOVE how thin the patties are, no other burger place does it right and it's so hard (with current equipment) for me to make them like that
you can use the bottom of a pot and parchment paper and press your patties down right in the pan if you like thin patties
@@pinbi7 And smash patties cook so fast and easy, it's really hard to undercook and if you know that they don't need to cook for long overcooking isn't easy either.

So I laughed at part of your guy's conversation. I make Thanksgiving every year for about 30 people by myself and they always wonder why I barely eat when it's suppertime. I've been smelling and tasting that food all day, I'm good. Only a cook understands this!
This is my all time fav from Taco Bell too! I enjoyed your back n forth chat about food, cooking, and putting together the videos even. But, back to the double decker! Yes please get those shells in the oven! Hilarious listening/watching y'all! It is like being in the kitchen with your best friend cooking together. You did loose me around 22 mins and fast forwarded. Came back at 30. Homemade all the way! I find it very easy to make them homemade. You guys are having so much fun!

Totally agree on that "vacation house knife" scenario. If you have a half decent knife at home that you occasionally run through a sharpener you are already the owner of a knife sharper than 90% of people out there, and it's such a quality of life improvement in the kitchen. If onions hurt your eyes when you are chopping them up then your knife isn't sharp enough.
