@@Fershizzal I literally went on a tirade at my friends a while ago as someone was following a chocolate cake recipe or something, but they changed literally every ingredient to be a vegan alternative/something they preferred, they added fruits and nuts, then didn't add chocolate because they didn't like it, then rated the recipe poorly as the cake wasn't a good chocolate cake! I'll need to see if i can find it again as i am not making it up, it drove me crazy! Like you said, so many people do this! How do you change everything in a recipe then blame the recipe? :') There's been times i haven't had the exact same ingredients a recipe called for and thought "Well if it goes wrong that's on me", i thought that was logical! Now I'm wondering where my reward is for being the smartest man alive? Haha
@@Fershizzal There's an old story about a proud but lousy cook, who sent various family members to spy on their neighbor for a better soup recipe. But occasionally the lousy cook would taste the soup, decide it needed 'a little of this' or 'a little of that'... Until inevitably it tasted like their old recipe.
You don't want to use fresh mozzarella as it is too wet, use the low moisture mozzarella that you see used on pizza. That big gush of liquid you got is because of it.

So if you eat spaghetti all covered with cheese, Hold on to your meatball and don't ever sneeze.
I think the bits of fresh mozzerella are what caused the liquid to pour out when you sliced it, there's a lot more liquid in that fresh mozzerella. Looks so delicious though.
Barry, quick suggestion: don't cut the basil with a knife otherwise the edges of the leaves will turn black and it will be less flavorsome; tear the leaves apart with your fingers ;) cheers from Italy
All UA-cam or social media cooking videos where they are just shown cooking with a horrible background music and you don’t see them eating what they make are 100% so faked in the edit so that the food looks good So glad this channel is not faked like these and that you actually try the food you make and always keep it real
I’ve made an “Italian meatloaf” for years. It’s a meatloaf similar to your meatball, I put 3/4 of the meat in a loaf pan with a well down the center and stuff it with mozzarella. Then pan use the remaining 1/4 of meat to close it off. It was the only way I could get my daughter to eat meatloaf. I mean really tho, who doesn’t want a river of cheese?!? This looks so fun! I’ll definitely have to try it!
This is reminds me of what we have here in Indonesia called Bakso Beranak (literary meatball that giving birth). It's basically a big/ huge meatball stuffed with other things like cheese, chilli pepper, grounded beef or small/ regular meatball. The indifference is the meatball were boiled not baked
I wonder... when they say you need 150 grams of cooked, cold spaghetti, maybe they meant to weigh them cooked and cold. That would be like... I'm not sure, maybe somewhere between 50 - 75 grams of raw spaghetti. Anyway, it really looks AMAZING!

Challenge, make a spherical lasagna in this style, with a whole burrata at the centre. You could layer meat and sauce in the bowl. Finish with bechamel, cheese and quickly put it under the grill.
That draining hack is for those pots with two handles so you can hold the colander on with both hands. I do it a lot and it works well with rice, less in the holes and easier to clean
Next time you get a recipe that calls for american style "italian sausage" add some fennel or anise and coriander seeds to it since that is really what makes it "italian sausage" other then that you did a pretty good approximation. Red pepper flakes are what typically makes it hot but cayenne would be very similar to that.
I made this tonight, and it was pretty awesome! I like hot stuff, often use habanero and ghost peppers.. but following the written recipe it felt like maybe just a bit too much cayenne here for me. I still loved it, very greasy but juicy and flavorful, definitely a visual treat! And the recommended pasta amount was indeed too much to fit in.
You could try making the sides thinner and putting more spaghetti and fillings in. The reason you were having trouble closing it was because it was so thick.

I don't know if this is right so feel free to correct me. But I'm pretty sure its more energy efficient to boil a kettle first and then add it to the pan rather than boiling from tap water.

Like you said, so many people do this! I decided to follow along and made this for dinner tonight. Smash hit with the family, 10/10 will be making it again.
Personally, I think you could have kept the minced meat a bit thinner, so you could have put more spaghetti in it.
if it holds together I could do with like a third of that meat.
Yeah, that would be my guess as well. It looked delicious but the meat wall was very thick. Didn't crack though :D
