      Personally I would just throw it in the bin, I think it’s disgusting, I much more love ginger spice on its own
      And a good ginger cake is lovely, especially Jamaican Ginger cake

      Pumpkin muffins???? i asked my husband once to call to the local supermarket, for two packs of cream cheese to make a cheesecake. He brought Philadelphia with chives.....🤣

    The "pumpkin spice" mix also goes well in apple pie and sweet potato pie... and it's actually quite similar to the mixed spice often used in fruit cake and christmas pudding, though that has a higher ratio of other spices to the cinnamon.

    Barry! I tried a Starbucks cold brew with pumpkin spice foam at Paddington Station the other day, I liked it but the pumpkin spice foam tasted exactly like cake batter 😮

    Pumpkin Spice originated in America. It's just the mix of spices used in the Pumpkin Pies made for Thanksgiving. Big companies like Starbucks are responsible for the widespread use of the spice mix by releasing seasonal flavoured treats around Oct/Nov.

      They're responsible for trying to make it widespread, so they can make more money by making it a limited release.
      Meanwhile, gingerbread spice and mixed spice are available all year round and are pretty much the same thing.

      The component spices are very common in baking, and one can find it in a lot of baked goods that date back hundreds of years in American and British baking history.

    If you use potato flour/starch instead of flour, the roll will not crack so easily.

    Love a pumpkin roll. Love white hot chocolate and can’t wait to add the pumpkin spice. Absolutely can not wait to try that pasta and yes I think I will add hot pepper flakes to heat it up. I admit I have had a live of pumpkin my whole life so this is right up my alley!!! Thanks so much for a great start to autumn :))

    My mom & I make at least a dozen pumpkin rolls every year (they freeze beautifully btw) and may I make a couple suggestions? First you rolled the cake beautifully but if you want to ensure it won't crack when you unroll & then roll it the second time there's a little trick. Spritz a very thin tea towel with water so it's damp then generously sprinkle icing sugar all over it just as you did the parchment. When you flip the cake out of the pan flip it onto the damp & sugared tea towel then roll it. Once it's cool the towel will peel off very easily if you use enough icing sugar, the damp tea towel keeps the icing sugar from absorbing moisture from the cake & precents the typical drying that comes from letting something cool at room temp. Also for the filling try avoiding any melted butter, if you need to soften in the microwave allow the melted bits to get solid by popping it in the fridge for about 3-5 minutes, measure your vanilla so the filling won't be too loose & use a hand mixer, It'll fluff up the filling & it firms faster & more evenly. I'd also suggest trying the filling with & without the pumpkin spice. I love it both ways but the tangy cream cheese & vanilla really shines without the pumpkin spice in the filling & balances the sweetness so it's far less overly sweet tasting. There's nothing better than a slice of this still slightly frozen alongside a piping hot cup of coffee.

    Lush recipes Barry! I agree, a white chocolate is a lovely treat, nice smooth and creamy on a cold night. Have you tried melting white terry choc orange in hot milk with marshmallows and cream.. you could even put some sweetened pumpkin purree and whipping creaminto a piping bag and swirl on top with a ginger busciluit and chocolate shavings for that seasons twist x

    My brother used to make a delicious pumpkin soup, after hollowing out his daughters' pumpkins at Halloween, he just used shop bought curry powder to flavour it. His daughters are now 28 and 30, haven't had it in ages.

    Because Starbucks isn't big in Australia, because our coffee culture is freaking brilliant, pumpkin spice isn't huge here, and I actually find it discussting, but your recipes look good, 👍🏻👍🏻🇦🇺🇦🇺🦘🦘Cheers from Melbourne Australia

    It's full name is Pumpkin Pie Spice, but it's such a nice blend people started using it for other things.

      It's a small variation on gingerbread spice/mixed spice that Americans insist needs a special name.
      Yes, contrary to the name, it doesn't have to be only used for pumpkin pie.

    Fun handy tip..use vanilla paste for the hot choccy..but mix in the spice TO the vanilla...stops it floating on the top of the milk 🥰 Also I think that filling needed a tad more powdered sugar or at least whipped up more?...still all looks delicious 😍

    Pumpkin spice originated with pumpkin pies, a perennial favorite here in the States. Many pumpkin pie recipes use a similar blend, so the spices themselves are reminiscent of the pie. These spices are also used in apple pie, but the more assertive flavor of the apples makes the spices less prominent.
    As I recall, the spices first moved away from pie form when some chefs decided to use them in butternut squash soup, turning the normally savory dish into one that tasted like liquefied pumpkin pie. From there, some coffee house or other decided to try it in their lattes and frappes, and it spread from there.

    Yummy. If you grind your own spices, you'll get a fresher spice experience, but it's a bit more work to get it to powder form. I use a cheapo coffee grinder then sift out the larger bits. Speaking of fresh spices, I'm still trying to figure out how to make a proper spicy gingerbread cookie using fresh ginger puree. Your pumpkin pasta reminds me of a butternut squash ravioli in browned butter sauce with sage that I once tolerated. The ravioli filling contained crushed amaretto cookies! Too sweet for my taste.

    There's a restaurant (at Church & Wellesley) in Toronto that has pumpkin spice ramen on the menu for October. Personally, I prefer my the old fashioned way - in a pie, for something a little different drizzle a slice with maple syrup

    As an American, it's 100% our fault and our obsession with pumpkin pie - which is a fall pie. "Pumpkin spice" is the flavor of this pie.

    Pumpkin spice is pretty much British mixed spice without the coriander and mace. It'd be interesting how all those recipes taste if you substituted mixed spice.

    Not only do you make recipes from around the world, you also do seasons too, amazing. Now my mind is going bonkers with foods to make with pumpkin spice, like pumpkin spice risotto, pumpkin spice shots, and pumpkin spice churros with that icing you made but as the sauce, just to name a few. lol.

    I never put cloves in mine because I hate cloves. The earliest recipe for pumpkin pie is from an early American cookbook. I think Townsends has a video on it.

    Pumpkin spice was actually invented by an 11th century Benedictine nun, herbalist, visionary, philosopher, and Doctor of the Catholic Church- St. Hildegard von Bingen! At the time, she called the particular combination "spice of joy" and you can still find her original cookie recipe that she used to make for her order! She's really awesome, highly recommend looking her up.

    As a Norwegian the most surprising thing to me in this video is that you can buy alcohol at 7am 😂 in Norway you can’t even buy vodka at the supermarket, only beer and ciders 🙈

      Same in Utah in the US. We have state ran liquor stores for liquors, and wine & wine coolers.. Only beers are in grocery stores and gas stations. We can buy liquor at 10:30am at the state liquor store. but at restaurants we have to wait until 11:30 for any alcohol and you have to order food with it. Any alcohol can no longer be bought or served after 1am.

    Part of me feels like the roll cake should have had shredded carrot in the mix. After all, carrot cake is pretty lush, and shares a lot of spices with "pumpkin" spice.

    Interesting, here in the States, it's still called cream cheese. It's amazing how there are so many linguistic differences between the UK and the US, despite the globalization effect of the Internet.
    Did you know that many "pumpkin pies" and "canned pumpkin" are usually squashes instead of actually pumpkins, at least here in the States?

    I made a flawed version of the pasta. Couldn't get my hands on any vodka so had to substitute with apple cider vinegar.
    Still not bad. Imagine its way better with the vodka but still. Also added some meatballs.

    And I also found out that it’s so cold, and the pumpkin is not real pumpkin is butternut squash in most name brands like Libby. I usually get the sugar pumpkins out of the store and make my own pumpkin purée.

    pumpkin spice is the flavor in pumpkin pie. that pie has been around for centuries. it's only been a couple of decades since pumpkin spice everything has been popular. in the US anyway.

    Pumpkin Spice things in America usually have artificial Pumpkin flavour. Starbucks added puréed pumpkin to the ingredients of its famous pumpkin spice latte in 2015

      The pumpkin spice latte at Starbucks actually does have pumpkin, but he’s making pumpkin pie spice, which is mixed with pumpkin for pumpkin pies.

    I've got to say, these pumpkin spice dishes are certainly healthier than what you get commercially. Even the hot chocolate. I found a clip where a guy breaks down the nutrition facts of one of Dunkin' Donuts pumpkin spice latte based drinks, and that thing was horrific. It had a whopping 46 teaspoons worth of sugar in a single serving of that drink! That's the same as fourteen of their glazed donuts!

    In the fall, I make (yeast) bread with pumpkin or squash purée and sage leaves for garnish. Lovely! Might consider trying some with pumpkin pie spice and no sage.

It's water and ethanol, heat it up, ethanol boils off, so, you've got expensive water mixed into regular water, I'm sure some vodka connoisseur will extoll the virtues of various even more expensive ones citing lake waters or grains or whatever else, but, supermarket stuff's just water and distilled ethanol... :P

    Personally I would just throw it in the bin, I think it’s disgusting, I much more love ginger spice on its own
    And a good ginger cake is lovely, especially Jamaican Ginger cake
