      Me too! But I don't like the huge pieces like they sell today. When I was growing up you never saw chicken like that in the grocery store and the flavor was so much better! I had a butcher who showed me how to cut up chicken years ago and once you learn it's so easy.
      Thanks for showing these young people how to do it!

    Our Friday night dinner at my parents in Brooklyn NYC in the Brown stone 3 story walk up. Oh the smell was Heaven. This meal you made was spot on was was on our table every Friday night at 6:00 PM I still have all my Mom's cast Iron skillets. and use them all.Yes they are from her home down in Augusta Georgia. 👍✌

    Grandma always put a pat of butter on each piece towards the end. She always fried chicken in a cast iron pan. Thanks for taking me back. She's in heaven now and I haven't had great fried chicken since 1986.

    Cast iron, there is no equal. I have a skillet that's been in my family since the 30's i could loose everything else but that damn pan. Cheers mate, much love from Oregon.

      You are very humble and a skilled chef! You make it look easy. Well follow up to my comment....
      My chicken was an EPIC FAILURE! The only variation to your process was not buying a whole chicken. They are over $20 here and I refused to do it. My chicken parts I will not even call it fried chicken. They were soggy and terrible! You rock though!

    We've made everything more complicated. We all grew up eating chicken fried this way. Even BBQing... I have 3 different grills with diffuser plates, thermometers and all kinds of accessories... My parents never used none that stuff and the BBQ came out great.

      I'm with you brother. My friend was on his smoker with like ten wires hanging in and out of it. I asked him if the thing was on life support or what lol. If I have to hook up all that crap to cook a meal I'm done.

    When I saw you using a fork and not tongs to turn the chicken, it reminded of how my father cooks chicken. All he uses is salt and pepper and his cast iron skillet chicken has the best flavor I’ve ever tasted.. and it’s even better the second day or cold‼️

    Not only did it look delicious but the sound of the crunch! The beans reminded me of the beans my grandmother made when I stayed with her in Texas. Sometimes we just had the beans with some cornbread! I am looking forward to trying this recipe! Thanks! ❤️ 👍

    I love the look of this chicken. It was in the skillet long enough to really reduce the amount of fat in the pieces. And actually the skillet itself is pretty under-rated tool in the kitchen these days. It's kind of old fashioned. BUT it is absolutely the best for even frying. It takes a bit longer but the results speak for themselves.

    My grandmother is from Birmingham, Alabama and my mom is from Washington, DC. They both had their own way how to fry chicken. Cast Iron Skillet were their best pan to fry anything. My grandmother cook just like don't need extra stuff to fry chicken old school folks. I'm a 85 baby. I grew up in the 90s. Sunday meals were best at grandmother house. sadly I loss my grandmother the day after Thanksgiving back 2016. My mom is living in a nursing home with stage 2 dementia. I'm 38 years old I cook just like my heroes. I do add some short cuts in the mix. You just brought me to my childhood. Blues and cold Pepsi in my grandmother kitchen. My mom kitchen was old school songs from the 70s-80s soul and R/B with rum and coke mix in her cup.

    I fry my chicken just about the same but haven't tried mustard, interesting so next time I'll try that.
    I'm glad you mentioned don't poke the chicken while frying.
    I learned from my grandmother and mom to cook because they both were excellent cooks, my grandmother was a cook for the Watson family when Tom was a baby, she knew all the tricks!
    Only thing I need is gravy made from that oil with all the bits!
    Nice job man!
    Cast iron is the best!

    My great aunt Ethelyn (called her Leen) fried chicken this way. Pan was a bit smaller but still cast iron. I do not have the patience to stand there and tend frying chicken. I love it but have no current experience. I'm willing to try this now that I am retired!! It was soooo good.

    Gramma did this every Sunday for dinner! Difference being she put onions in to fry with the chicken! Mmmmm was so good. Learnt her method and taught my 3 girls the same! Hopefully their hubbys benefit from it all too!

    I can remember my Mamaw had two kinds of Sunday dinner after church. One was the kind where a roast beef and potatoes and carrots had been low cooking all morning while we sat in church, stomachs grumbling. This meal was generally ready a half hour after we got back. But the other meal, the one we looked forward to was skillet fried chicken which took some time, as you demonstrate. I remember hearing the sound and smell of that chicken frying, wanting to eat, but knowing the wait was worth it. I would give anything to eat another drumstick from that skillet, but I reckon you have put it back on me to make it myself. Maybe doing so will inspire memories in my daughter similar to my own. And maybe it won’t take her as long to get started as me. Thank you for the reminder. Can’t seem to find the chicken recipe link but I reckon I can transcribe it.

    Thank-you..!! Just made this reciepie, I didnt have whole chicken, so I cut up chicken breasts into strips and made them into fried chicken fingers, and they were awesome! Thanks for sharing.     Your fried chicken recipe is something that I have never seen before. I seen it with the buttermilk recipe, milk recipe, and plenty of salt . I can't wait to try your recipe.     Thank you for sharing your secret. I am from Texas, my mother was from Tennessee and dad, Georgia. I truly can’t not tell you how mama seasoned her chicken. I do know I have always buttermilked mine. The issue I always have is the outside is crisp while the meat to the bone is not cooked enough.
    I am going to use your recipe. I love the idea of using mustard as I use that in my meatloaf.

    Here's an opportunity to see all that poetry in motion.....
    I respect that.... as me always had a healthy appetite growing up.
    Now, in 70s I feel fit, but weigh-in bout 180.
    Also appreciate your encouragement to use regular, chicken; as opposed to store-bought if possible.... don't wanna get away from tradition bringing back treasured memories of down home......... thank you young sir!

    Wow love this. I still fry my chicken this way, it's an old black southern tradition yes I said it. I talk to people about frying chicken and they tell me all sorts of crazy stuff and it baffles me when it's so simple and good this way. I do one thing different in that I like to put a lid over the top it just seems to give it a better crisp

      Lol right! I also put the lid on but, I'd figured I save that for the next fry. All the water falling in the water when you remove the lid may scare some folks lol. I don't think the ready for the that lol. As a kid it always made me sleepy when my mom had the lid on frying, and I'd wake up when she took it off from all the noise.

    I think I'll try your approach with only one change. To me, salt is a must. I already use the same other seasonings you use. And I also like prepping and seasoning the chicken, then letting it absorb the flavor for a while in the fridge.
    The crust on your chicken looks appetizing.
    The way you cut your pieces makes perfect sense.
    And I especially like the way you honor and remember your parents, grandparents, and family in your cooking, and how you carry on with and share their ways of cooking for their loved ones.
    The world needs much more of this and other ways of showing love and care within the family.

    I never saw mustard in fried chicken, but so many little tips and things y’all said made so much sense and answered so many questions I’ve had for decades! Holding the pieces over other chicken so there’s no splash! Awesome! How to cut up a chicken, why no salt in your rub, how much oil, all kinds of good info. Thanks so much!

    I am a 50's baby from the south and my mom used to cut up and prepare chicken the same way. She would fry it in a large cast iron skillet with some lard back then and you could smell that chicken cooking all over the neighborhood. OMG finger licking good. I am so happy to see that you fry chicken the old fashioned way the same as i do. Thank you. From milwaukee

    This is the one thing I wish I had paid attention to before my momma past on. Her fried chicken was simple, just like you show in this video. I still cannot mimic her fried chicken. I believe it was her particular technique that is missing, but yours is by far the closest I can come to momma's. Thank you so much and I really enjoy ALL of your videos.

    I am so happy you believe in sharing information. I go to Walmart and literally ask ppl if they have high blood pressure and tell them about beet root pills, that has saved my life. I am 75 and still active and healthy.
