I’m just starting your video so I’m not sure how you do yours. I leave my chicken set out for about 30 minutes. Once I bread my chicken I sit it on a cooling rack for 10 minutes. I preheat my oven to 350, I line a sheet pan with foil and put another cooling rack on that pan with foil. I fry my chicken in batches. As I take one piece out I add another one to the frying pan and put the cooked ones in the oven to stay warm. By adding a piece as you take one out it keeps the oil at a more even temperature. And what you’ve fried is staying warm in the oven. I like just salt and pepper.

My husband was raised by his grandparents and they dressed and sold fresh chickens, also sold fryers as 2-1/2 to 3 lbs, never larger. Now they make them 7-8 lbs, tough old birds too.
When I cook chicken I use about the same seasonings, but I add paprika and chili power, set the meat out and let it come down to close to room temp( cold meat seizes up and becomes tough when you heat it up). I use two cast iron skillets at the same time, one for the big pieces and one for the smaller ones, because they take diff cooking times and over crowding the skillet makes the grease bubble up and makes a mess.
Fried Chicken. I love fried chicken. I will go out of my way for good fried chicken. In 2012 we traveled from the West coast to the East coast in our RV, taking 3 months from California to Pennsylvania, and back. Every where we stopped for supper, I would always try to order the fried chicken. Must have eaten over 30 fried chicken dinners. Here are the results: Tied for Number One; Paula Deen’s fried chicken in Cherokee, Tn. Definitely not a small chicken. It was only one half of a chicken, but had to get a take out for half of it. Very delicious. Also Tied for Number One; Loretta Lynn’s Kitchen in Hurricane Mills, Tn. We went thru the buffet. When it was time for desert, just got more chicken. No where else on our trip could anyone make chicken close to as good. Just for reference, as you go from west to east, the Fried Chicken gets better and the Chinese food and Mexican food gets worse.

I used to make really good fried chicken many moons ago ! Then we ate more healthy ......haven’t tried it again worry it’s not as good as it was back then !
Hello I see happiness all around you, can I please share from it ❤?
I absolutely love your at home kitchen videos! It feels so real and easy to understand with your typical home cookware. You give off that feeling of a mom explaining how to cook to her favorites to her kids. I seriously cant thank you enough for doing these videos! You are helping a northern girl like me learn how to make some delicious southern food! Love you Paula Deen!
I wish I had Paula Deen as a grandma
I never knew dark meat took longer to cook. Thanks for the tip "Aunt Paula" (You appear to be to me. )
Right lol
I didn’t know because it was dark beat, but I knew because it was thicker pieces. I always cut up the chicken myself.
Watching you makes me feel like everything will be ok. I love you Paula always have always will ❤️.... your just good people.
You said it perfectly. There's something very comforting about these little videos.
Yummy!! This makes me want fried chicken, and it's only 8:30am!! 😋
Paula is just so comforting 🧡

I use buttermilk in my marinade and soak it in the fridge overnight. It helps the chicken to stay very moist.
I do the same. Very tender chicken! And I do season my flour. Celery seed is my secret ingredient, along with the usual salt, pepper, garlic powder.
Same! I will try the celery seed.. i usually use salt, pepper, garlic powder, onion powder and paprika
@@HappyCats17 I use overnite soak in buttermilk too.Do you crush the celery seed? I grind my celery seed with a few leaves of thyme in my mortar & pestle or use celery salt, onion powder, paprika, a pinch of cayenne and s&p. I add that to my flour.
yes...over night in salty water...mannnnnnn
I do too. That's the way my mother dud it. She was given the recipe by an American nun, from the Convent school I went to in Central Africa.
I know this is 4 years old. But I just found out today in 2024 in Panama the country. I didn't know how much I miss Miss Dean and her cooking. Her voice took me back to those days! God bless you.
I have ALWAYS Loved Miss Paula Dean. True American Southern gentile class.
Would love to see a breakfast dish!! Pancakes? Eggs or casserole? Muffins? Paula’s favorites breakfasts!
375° is a helpful temp. Then only fry 1-2 pieces at a time rather than all at once. This makes sure temp stays right.
She had posted those
Breakfast/Brunch Casserole
Janine Nava I forgot she had done the French toast casserole haha. But would still love to see more! 😄
Pop overs?? Strata? Lots of yummy breakfast ideas. But my go to for a yummy breakfast is eggs rancheros. Pork chorizo, minced onion, a can of fire roasted tomato, poached eggs, yellow corn tortillas, sour cream, fresh avocado and cilantro...are all components to a hearty breakfast! I'd love to show you how I fix this!!
Paula, thank you for inviting us into your home...it's just like being invited to a dear friend's. I enjoy your recipes and hospitality!

Hello Vicky I see happiness all around you, can I please share from it ❤?
Thanks Vicky for giving me a chance to share your happiness with me and I hope we can be good friends together
So glad you’re cooking again! That chicken is great, the tips even better! 69 years old, from Albany, Ga, retired NASA Physicist and Black. Don’t live near any of your restaurants but I used to go to Savannah to visit my last child, Savannah State-he ate there a lot!👍🏾😊 Truth to tell that line was just too long for me in the HEAT!😎
No need to capitalize your identity.
Miss Paula never stopped cooking.
Do y'all cook?
Brian Chapman : I started with, “I’m from Albany, GA”: ‘shore I cook: 👍🏾How about this for capitalizing: I’m considered one of the HIDDEN FIGURES ( from 2016 movie)!!
Dirk RRango : Black from her hometown, Albany, Ga, in her age range. I would imagine she is/was trained racist! I don’t have to forgive her for being racist but I can still learn something from her and applaud her skills THAT some BLACK person could have taught her!😎
Wow, contaminating that entire kitchen.....lol. Mixes the chicken, grabs seasoning, touches the faucet. Cleanliness is Godliness.
Yikes. Yep, better not to wear the gloves and just prepare seasonings and everything else first.
Really? She has soap and water
I always sanitize everything after cooking with chicken even run the dishwasher with bleach.
Honestly I’m not dead and I’m well into my 70s. My mama cooked just like that and so do I. If you think the restaurants are keeping it safe and sanitary you got another thing coming.
My mom would always cut up a chicken, season it, and coat it in flour ! She would always fried it Crisco cooking lard ~ it was EXCELLENT crispy out side, and juice tender inside ! YUM I tried it way she done it, and NO WHERE AS GOOD AS HERS ~ HERS WAS EXCELLENT
I would love to see you make baked lasagna it’s one of my favorites dishes I make sometimes for my mom and me. I would also love to to see you also make pineapple upside down cake. I love chicken and thank you for making videos hope you keep making them.
Myra Robinson Bivins haven’t made a pineapple upside down cake in so very long. Think I’ll make one.
Pineapple upside down cake with that sauce from the Betty Crocker cookbook was my favorite birthday cake.
Charles Eagan I have not made one in forever either loving the cake it’s one of my favorites.

Hello, how’re you doing?
My mother taught me to fry chicken in a cast iron skillet and she never did a marinade and it was the best fried chicken. She used salt, pepper, accent and paprika. She would add the same seasonings to the flour, use a brown paper bag to shake it all up and fry in vegetable or corn oil because back then nobody ever heard of peanut oil. I love chicken backs too Paula and so did my mom. She's been gone 7 years now and I wish she was here to make some of her fried chicken and peach dumplings. Thanks for sharing your recipe and bringing back memories.

I always seasoned my flour and it's such a messy job. I will season my egg dip now instead and use some hot sauce.
We pasture raise heritage, slow growing chickens and turkeys. Out of 100 chickens, we harvest 50 at a dressed weight of 3 pounds, 25 at 5 pounds and the last 25 at around 7 to 8 pounds.

Paula, I just love spending a few minuets with you in your Kitchen . You are such a kind person . Thank you for making the videos !!
Hello I see happiness all around you, can I please share from it ❤?
This was an excellent tutorial. You are a national treasure, Paula Dean.

Hello Dorothy I see happiness all around you, can I please share from it ❤?
When I cook chicken I use about the same seasonings, but I add paprika and chili power, set the meat out and let it come down to close to room temp( cold meat seizes up and becomes tough when you heat it up). I use two cast iron skillets at the same time, one for the big pieces and one for the smaller ones, because they take diff cooking times and over crowding the skillet makes the grease bubble up and makes a mess.
I love you Mrs. Dean! Thank you for your UA-cam channel. It really helped me through Quarantine times. Stay safe. Mwah
Never crowd your chicken in the skillet. That’s what’s causing your temperature to drop too fast.
Fried chicken has always been one of my favorite comfort foods it’s so good and I love your version of it :)

Jojo Momma I know, right!!!! After all these years, it to CoronaV to teach me how to cook😄
Hands Down Paula your fried chicken recipe is The Bery Best Fried Chicken Recipe Ever!!! Your Recipe is the Only Recipe I Use.

I miss Paula Deen on Foodnet! The Foodnet lack good home cooking chefs! Those home cooking chefs cook with common kitchen items!!! Love you Paula!!!!
I just wanted to say this is the best chicken I have ever ate, I followed the recipe to a T. But I do not understand my wife and I went to Pigeon Forge Tennessee so excited to eat at Paula Dean’s restaurant, the service was five star, everything was five star except the chicken that was made was not done the way she shows here. So my wife and I was wondering which restaurant fries the chicken like this? Again I’m not saying the chicken was bad but it just didn’t have the house seasonings like in this recipe. I am from Kentucky and we got stocked up on the hot sauce, house seasoning, and there we gooey bars. I am the chef in my household and my nine-year-old daughter loves watching Paula Deen on UA-cam, and we have fun with all her recipes. Thank you for helping me make great memories with my family.
Ma'am Paula Deen I lost my mother when I was 12 so I never really learned to cook her favorites and my favorites from her but one of her dishes she called it chicken fricassee because she didn't know what else to call it. It was a greenish color with broth with a wonderful taste and then floated biscuits on top and baked until they were brown. Most delicious mean from childhood. Are you familiar with any recipes you make?
