made a batch of this last year, about a gallon. A long year supply in my house. kept 1 quart fresh and raw.. 3 quarts were cooked with with vinegar which gives a very long shelf life... had used the crushed pineapple in the can and ginger root.. more peppers ready to harvest now and will make next batch with horseradish, fresh pineapple . Love wasabi.. thanks from Cajun country..

Uncle Chris, this pineapple pepper sauce looks absolutely fantastic. I can only imagine the flavor. I’m definitely going to borrow your recipe. FYI…the woody part of the pineapple is edible, it is very rich in the enzyme bromelain, which is good for gut health, among other health benefits. As always, your recipe is a winner. Thank you for sharing. Blessings to you and family.

@@MemoGrafix I live in the Caribbean and I have some "suckers" that I got from a top that fruited after 3 years. I took the suckers and planted them when they got big enough. They say that the suckers take a year less to fruit but, mines are coming up on their 3rd year right now. The insides the heart of the plants are turning purplish red now,so I guess the start of 2020 will say what will happen to them. As for you, you should try mixing some fertilizer specific for pineapple plants. I got rid of the mother plant after it produced me a pineapple the height of 6 inches which included the leaves and about 4 inches in circumference.
