I just had the exact same issue on my 7.3 IDI, oil filter o-ring was pushed out and dropped about 9 quarts of oil. Turns out the high pressure relief valve against the block in the oil cooler was stuck closed. Pulled it, cleaned the relief valve, greased it and made sure it moved well in its bore and the spring was good. May need to replace oil cooler o-rings to stop coolant and oil mix ~$30 online for a kit.
Not to rule out the possibility of a cracked block but the o-rings on the oil cooler are more often than not the culprit. Pulling the cooler is a bit of a pain but new o-ring/gasket kit can be had for ~$40. Don’t have a writeup for that procedure but plenty online. She’s got potential dude!
My comment keeps getting deleted probably because I put a link in it. If you go to Ford Truck Enthusiasts and search “7.3 IDI Revival” you will be directed to my thread where I did my own writeup on this overpressure oil issue starting around post #97 on page 7/8. Good luck

Glad to see a video on these ol workhorses. Couple days ago i picked up myself a 1990 f350 crew cab longbed dually. 7.3 sadly auto but will be swapped and im converting it to 4x4. 92K original kilometers.
Congratulations getting that truck to work to run. I would recommend go to Steve's Auto on UA-cam and also his web page and he recommends a lot of stuff for 7.3s especially additives. Now if you're going to keep the truck my suggestion is change out the radiator and put a separate transmission cooling radiator a big one that's the first thing the second thing change all the hoses out Don't miss one The belts the o-rings on the injectors just go down the line and get over them get all that stuff replaced I personally would do this change the oil and put a double rancor filter system on the fuel system a primary and a secondary that'll keep the fuel really clean then you have the Ford filter for fuel as the third one. It's really important to put in really good heavy duty additives into your fuel because there's no sulfur in modern diesel and that's the problem that will cause your pump to go out if you go to Steve's Auto he will he has some really good videos on seven threes and also other information on his website. But Ford's manual transmission is wonderful just wonderful I had a 1985 f250 for speed manual it was outstanding Love that truck with a 6.2 l diesel and but every 40,000 mi I just like clockwork put new o-rings on all the injectors just change my hoses changed my belts I had a double rancor system on my fuel and it was outstanding had a handle primer so you can prime the bowl really great I put $480,000 miles on it and it ran great
