排骨 300 克
蒜 1 個
薑 1 片
辣椒 1 隻
生抽 1 茶匙
老抽 1 茶匙
蠔油 1 茶匙
糖 1 茶匙
鹽 1/4 茶匙
澱粉 1 湯匙
油 1 湯匙
胡椒粉 適量
🟢做法:
1️⃣ 將排骨切小塊,洗淨,瀝乾水分。
2️⃣ 加入薑、鹽、胡椒粉、糖、生抽、老抽、蠔油和澱粉,醃半小時。
3️⃣ 熱鍋下油,下一半蒜蓉炒至微黃,盛出加入另一半生蒜蓉中拌勻備用。
4️⃣ 把蒜蓉加入排骨中拌勻,將排骨平鋪在碟中,大火蒸 10 分鐘即可。

🟢Ingredients:
Pork ribs - 300g
Garlic - 1 bulb
Ginger - 1 slice
Chili pepper - 1
Light soy sauce - 1 teaspoon
Dark soy sauce - 1 teaspoon
Oyster sauce - 1 teaspoon
Sugar - 1 teaspoon
Salt - 1/4 teaspoon
Cornstarch - 1 tablespoon
Oil - 1 tablespoon
White pepper powder - as needed
🟢Cooking directions:
1️⃣ Cut the pork ribs into small pieces, wash and pat dry.
2️⃣ Marinate the pork ribs with ginger, salt, white pepper powder, sugar, light soy sauce, dark soy sauce, oyster sauce, and cornstarch for half an hour.
3️⃣ Heat oil in a wok, stir-fry half of the minced garlic until slightly golden brown, and remove it from the wok. Mix the remaining minced garlic and set it aside.
4️⃣ Add the garlic to the pork ribs and mix well. Spread the pork ribs evenly in a steaming plate and steam over high heat for 10 minutes.

For 300gr pork rib:
Choped ginger
Salt 1/4 teaspoon
White pepper powder
Sugar 1 teaspoon
Light soy sauce 1 teaspoon
Dark soy sauce 1 teaspoon
Oyster sauce 1 teaspoon
Mix well
Add 1 tablespoon of cornstarch
Mix well
Cooking oil 1 tablespoon
Mix well
Garlic (half fried half raw)
Chilli
Mix well
Steam ~10min on high heat then let it sit for 1-2min after cooked. (I always steam at least 20min haha)
Add spring onion for plating.

我好失敗 照做但蒸完水多到變湯 英國排骨不停出水
用廚房紙盡量吸乾水,醃時落多一點生粉,落生粉時用手醃佢(揉搓)2至3分鐘。

请问需要用焯水去腥吗
用來蒸的排骨最好不要汆水, 汆過水的排骨不夠嫩滑, 須要長些時間來炆煮, 怕排骨有腥味可以用澱粉揉搓洗淨,或用鹽水浸泡30分鐘再反覆洗淨,或在流動的水下沖洗30分鐘都有助去腥.
可以醃好放雪櫃,第二日蒸嗎?
可以的, 但新鮮的排骨即日醃即日蒸較好吃, 如醃好放入雪櫃,取出時記得放一會令它回復至室溫,否則蒸的時間要加長.
