Almost all of them will tell you that you should cook from the heart and serve from the heart. We beat ourself up more becausw we think we are not good enough and thst we should be better for the people that we dont even know. You see a lot of the good chef that are happy actually retired onwing a simple casual restaurant which made them happier because they are cooking and serving what they want without thinking of any judgement that could destroy them.

Had to visit this place after seeing this video. Found myself on the last day at Ryes right before it closed and the food was freaking bomb. The scotch eggs were amazing and the meatloaf was succulent and tender. Very sad this place is now gone and awaiting Cal Elliott's next restaurant!!
In every kitchen, pizza shop, restaurant, Italian spot, and fine dining joint, are a group of hardworking and dedicated latinos/latinas. So let's give them a shout out cuz they make the great food we all love!
This guy has it figured out. He doesn’t care whether or not he makes money in his business (at least in the beginning) and he makes food that he would love to eat and just experiments, that’s the recipe for the perfect comfort food

I've never had fried Lotus or sea urchin paste but I'm pretty sure I prefer the grilled cheese hands down any day. The fried Lotus did look pretty though :-)
