Keeping the menu small is brilliant. Never need to worry about spreading yourself too thin. No need to worry about people complaining about this or that. There's only three items. Take them or leave them.

And it's so amazing to see someone live their life's dream and make a career out exploring and learning about something they adore. When I make my first of many trips to NYC to see family and do food tours, eating at Mr. Motz's restaurant is at the top of the to-do list.

George understands that for a burger to be good, the basics have to be good. The patty, the cheese, the bun. If those are done well, everything else falls into place, and you have a great burger. You don't need a mountain of toppings to make it great (though if you like your burger with all that stuff, there's no shame in it).
Yes, but to be clear, it is the process of putting the basics together that has to be good. The ingredients themselves can be sometimes be cheap and basic. George speaking about the Yankee Doodle burger: "Because there is something about those cheap-ass elements together really create, uhm, a great burger, and a great burger experience.” What George understands is that ‘sometimes the whole is greater than the sum of its parts.
George's knowledge & passion for burger is unsurpassed. I would love to eat at his place some time. You just know it's gotta be special! I could smell it through my computer screen.
You know months before he opened there was a sign of what this place was going to be and the name and I was standing in the bus stop and I said who's another burger joint and I said who's doing this now here we are much respect and I will be going to try the burgers

Had the chance to check this spot off my burger bucket list this las March. Brought my friend who doesn't feel one way or another about burgers and she liked the onion burger so much she brought her mom another time. Highly recommend both the original, whatever the monthly burger is, and the Chester. Got a feeling you can't go wrong though

I just went here this past Monday and I thought "ok, he'll be there for the first month for appearances and will only pop in every so often." Nope, he was there fixing the aluminum trim on the counter and he was genuinely nice, even joking with me about it. Nothing but respect for the man and the restaurant staff!
I just gave this man a round of applause. And I eat like MAYBE 2-3 burgers a year. The amount of burger CRAZE when it happens is irrefutable. It's one of the rare burger days.
In Ireland the homemade burger was basically mince mixed with egg and flour and onion and smashed in a frying pan. We didn't know we were trendy in the 80s. :)

I'm from Oklahoma, where the fried onion hamburger was born back in the 20/30's depression. Meat was hard to get and expensive, so they started adding lots of onions as a filler, and wallah..... Back in the early 60's, my dad would buy a bag of 5 for $1 on Friday evening. El Reno, Chickasha, Ardmore should ring a bell.....
I buy the schweid and sons burger patties non cooked at my grocery store here in Florida called Publix ! The quality of those burgers is insane ! They are pretty expensive like 15 bucks for 4 6oz patties I believe ! Worth every penny
When I was there the burger was honestly one of the worst i ever had. All the burgers i tried after were amazing, 7th street, burger she wrote, shakeshack, etc.
Like George I like to use Martins Buns! I make a great burger where I soak the meat in Guinness and use Dublin Cheddar, the buns I use are either Martins or Bernardino’s 👈a must try. It’s the Dubliner. If you’re reading this George any ideas or suggestions to make it more Irish?
George , you have made some perfect burgers , before you mentioned it I I was thinking Oklahoma onion burger. I can get Vidalia onions from the Vidalia region of Georgia year round which I prefer. You had another show , but you were using foul words so I could not watch because my grand children like to watch food shows with me, but I wish they would have kept your show burgerland on with traveling to eat butter burgers, etc... & Martin's potato buns/ rolls are the best
