- This is a video just showing how to prepare a Maryland favorite: the blue crab. This is a crab that is fished out of the Chesapeake Bay and is a huge part of the culture of Maryland as is seafood in general. These are the crabs that famous Maryland crab cakes are made from, the best crab cakes in the world as far as I'm concerned. Hope you enjoy.

I'm from Maryland and I've been in North Carolina for 30 years. I watched your video last week. October 15, 2014. And you made it look so easy that I went out and bought a dozen blue crabs, just to see if I could do it, and how well they would turn out. They were great. Reminded me of growing up in Salisbury and Ocean City, MD. In the 80's. We ate crabs at least twice a week. Thanks brotha, u done started something. I'm hooked again.

Yeah, I remember being in the parent back yard and dropping a Bushell on the table and everyone digging in.. I miss Salisbury. I'm in Houston now and they swear crab boil is the best.. they are such lost souls.
To tell if a crab is offically dead instead of just looking at it, when they're not moving snap the leg(s) and see if it dangles. It'll show the crab is dead. When you snap the leg, and it pops back into the socket, the crab is still alive, it's just very weak on the brink of death, but still good enough to cook, and eat. Just a tip.

I've been around seafood and fisherman that is a first. lmao I'm going to ask my friend who's a marine biologist about it. she actually studies the blue claws and the environment factors toward their development.

Hey buddy good video, i can share a tip with you. When you find a crab that is dead, pull its shell off and right in the middle of its body is a clear organ. Thats its heart. Stare at it for about 15 seconds and wait to see if it's beating before ruling it dead. Ive come across plenty that i thought to be dead but the heart was still slowly beating. But if it doesnt beat obviously its dead. I get crabs every weekend in the summer so i do a ton of cleaning them. Have a good one!

That's the best instructional demonstration I've ever seen on steaming live blue crabs. I'm a Maryland native..... originally from the Eastern shore (peninsula area-crab land). So glad you included the Beer. It's the KEY ingredient to that fantastic taste. It's also good you cautioned folks about purchasing dead crabs and to be aware. VERY Good tutorial. I enjoyed it 😊

I have snow and Dungeness at the house. Also big gulf shrimp.hyping myself up to eat them.
I grew up with my Mom streaming our crabs. Beer is the best way to go. We also use beer to stream our shrimp. I Love this video.

I was born and raised in MD and eating crab was a huuuggge family event that I remember fondly. Now that I live in NC, crab isn't as big a part of the culture, especially Blue Crab. This video made me feel like I was home again, thanks so much for the upload!

Great Video Alutacon !! How many minutes do you leave the crabs in for steaming ? Average time? and apologies for the rookie question.!
I like steaming with dark beer and apple cider vinegar.. but I season with old bay after steaming not before.. cause the old bay doesn't penetrate the crab to the meat and also the cooking kills the old bay flavor and you really don't taste the seasoning after it's cooked anyway.. what you think about seasoning after steaming ?
just the opposite of what you just said, in my opinion. i think the old bay doesn't physically penetrate the crab, but it definitely imbues its flavor on the steam which, of course, does penetrate the crab. never tried seasoning after. may give it a try. if so, i will let you know how it goes. thanks for watching!

Nice job, my friend ! I will have to try this method. Here, in Carolina low country, we clean them while they are alive, then put them in a boil with shrimp, corn, and sausage. And, of course, we add beer to the boil, with the Old Bay, as you do.
Mikel Todd that sounds good too!!! my family is originally from the Carolinas, so any son of Carolina that has a plan for a meal is cool with me!!!! the best eats I've ever had have come from my aunts' down there in the country. plus my cousins have horses to ride. you can't beat that. a good meal and a horse ride through the woods!!!!

Im glad you did a video on the crabs. They are really expensive in Maryland. We can get them for about 15$ a dozen for males in SC. They also boil them down here, not steam. My favorite is the garlic crabs though. They are steamed then sauteed in a garlic butter sauce and they are the best I have ever had.
$15 dollars a dozen is amazing. they haven't been that cheap here since about 20 years ago. We overfish the Bay and it drives the prices up. On this vid i was wrong about the jumbo crabs also. I said $65 a dozen, I just got a dozen yesterday and actually they are $95 a dozen now!

I know I'm gonna be crucified for asking this, but can I use another species of crab instead? I'm in California, we don't have any blue crab here but we have some prime Dungeness crab in season right now. Same recipe and cooking method should work right?
no doubt bru. that cooking method will work for dungeness too. we get those here. they are shipped in tho. not native to this area. but you shouldn't have any problem cooking them teh same way.

Like, midway thru the steam cooking, don't you wanna rotate the crabs up from the bottom of the pot, kind of mix them up, so they don't get overcooked at the bottom (where they're closest to the flame) and undercooked at the top?
you don't need to. they cook pretty evenly. Even more so if you have a wire rack at the bottom of your pot so the bottom layer isn't actually sitting in the water.

Great job!1 I live in the mountains of NC and have gone to the coast many times and ordered crab cakes and crab claws but have wanted for a long time to catch some crab and cook them myself. I have had a lot of questions about how to cook fresh crab and eat them and looks like you are the professor for cooking crab. I love your line "Blue Crabs love Heineken Beer" ha ha ha. I drink a cheaper beer like Coors Light but hey, if crabs like Heineken then when I catch them and cook them they get Heineken.Must be the full body of the Heineken. You have made me feel easier about body meat.....the gills showed up really good on the video and I have heard horror stories about people eating the gills and ended up puking their guts out for a while. Thanks Alutacon for one of the most informative videos I have ever seen. We are going to Kitty Hawk Colington Island for vacation and your tips will be a lifesaver. Good job.

For everyone talking about using Old Bay Seasoning... Try using J.O. #2 Seafood Seasoning it is actually what Old Bay used to be before McCormicks bought them and changed the recipe.

I'm in Japan now, but I am from Maryland and I just showed my Japanese friend your video showing how Marylanders do crabs. I still don't think he grasps how many crabs a bushel is and how it is totally normal for people to just run out and pick up a bushel or more of crabs.

So I steamed some crabs a couple of times and cant seem to figure out how to get the meat seasoned, I put a generous amount on the crabs and in the actual water. Please help
BJ, very good observation on your part. Been steaming crabs for 6 decades. Tons of seasoning are wasted every day in MD restaurants and crabhouses not to mention homes. No amount of seasoning in the liquid and sprinkled on the crabs before cooking have any affect to the flavor of the crab. Same with beer. The seasoning is spread while handling the crabs when opening and eating. Years ago crabs were never seasoned. It started at a bar that was giving crabs away and started seasoning them to increase their beer sales. We rarely season our crabs until the cooking process is complete. Nobody can tell the difference when a blind test is done comparing two pots cooked at the same time, one with and one without then seasoned after cooking.
@@JohnJohn-wr1jo lol Ive came so far in cooking crabs since I commented this 4 years ago. I totally agree, I cook the crabs first and then I will season them with kosher salt and old bay seasoning. I also get a spray bottle of water and I will mist the crabs while seasoning for better adherence.

Nice video, I'm from Calvert county and I agree they taste better when they have to fight... I was told that you gotta get the old bay in their eyes to make them happy (cause they love old bay). My family uses cider vinegar instead of water. thanks for sharing!
