No Way OLD BAY?! Professional Crabber Teaches How To Steam Crabs

- A professional crabber teaches how to steam crabs the Maryland way. Captain Cj, of FV Miss Paula, has been a professional crabber for 20 years and before that grew up on the Chesapeake crabbing and fishing. He demonstrates how he & Marylanders steam crabs, while dispelling a big misconception... OLD BAY Seasoning.
Visit seafood restaurants around the world and you're liable to find "Maryland Style Crab (cakes, imperial, soft crab, etc...)" on the menu. Maryland is the definitive spot for Blue Crab. When visitors come to Maryland, there's nothing like ordering up and breaking into some steamed Jimmies while on the Chesapeake. Most people who visit, often go away thinking Old Bay Seasoning & Maryland are synonomous. After all, its on a lot of marketing, T-shirts and decor so its understandable. There are a lot of videos that teach how to steam crabs Maryland style, but few hit the mark on the true Maryland secret... 🦀 We DON'T USE Old Bay. 🦀

I've lived in Baltimore my whole life. Crabs are the best. We use Old Bay . J.O. is good but old bay is our favorite.
What’s the difference between JO & Old Bay? I’ve only had Old Bay and love it.
@@dianaabel4125 J.O has rock salt. I love both the same
It’s neat hearing everybody’s methods. The Baltimore Sun had an interesting article from 2019, where they contacted 30 crab houses to ask what they use for seasoning. 18 used J.O. #2, 6 used Harbor Spice, 5 used a custom blend, and 1 used Old Bay in their own blend. Our family has always used beer to steam.
And the 'custom blend' is JO's :-) A tons of places just go to JO's say put in a little extra something and it becomes a custom blend.
Yeah I know of a couple that have custom JO blends. I like a little extra black pepper in it.
Born and raised in SOMD and I'm telling you we DO use old bay in MD.
Dang man! Back home in Louisiana blue crabs will cost you about 20-25 dollars a dozen! Great video!!
Yeah, similar prices in Florida. Maryland is crab crazy. haha. Thanks for checking in. 👍
VA $30.00 a dozen
We cooked Rock Hall & Kent Narrows-caught crabs on a Coleman stove, in the biggest porcelain pot we could find - it would hold 2 dozen or more mediums. A stainless steel rack in the bottom held the crabs up outta the juice. I sprayed the crabs down in the basket with a gentle spray from a hose - washing em off. Kept wet burlap over them, and in the dark, to keep em cool and quiet. Dad would be upstairs in the kitchen mixing the boil in a 4-qt saucepan - vinegar, water, cayenne, paprika, celery seed, cardamom, other spices - just a touch of Old Bay - not too much - it was too salty. I'd load the pot, the focus being to keep the crabs quiet and calm, and get the best pack. When the pot was full - I'd put the lid on, and set it on the stove - waiting for the boil. Pop would bring it to the garage - we'd fire up the stove - get it roaring - place the pot on the flame, open the lid, and pour that steaming hot boil all over them, and put the lip back before they had a chance to jump out. A brick on the lid would do the trick. Stove on high - and about 35 mins to steam. None of that heavy powder all over their shells - they got a good enough coating of seasoning. We'd caught em that day, or the night before, on trot lines baited with salted eel - and it was rare when we couldn't raise at least a bushel. We bought em sometimes - usually when we were striper fishing, and not crabbing. They were $25/bushel back then (mid-'60s). Call the relatives and eat crabs and drink ice cold beer till past midnight - some of the best memories of my youth.
Awesome memories. That's what it's all about. Thanks for sharing.
J.O. #2 all the way. Job well done captain. Those crabs look delicious! 🦀
J.O. on crabs. Old Bay for silver queen corn and eastern shore tomatoes.
Thanks Captain Cj, great job.
Videos just keep getting better and better, keep it up 🤝💯
Born and raised inLEast Baltimore.Hon. steamed in natty-bo,vinegar, seasoned with Jewish rock salt and old bay..hot peppercorn bread and butter on the side.
There ya go. Doin it the Old way. Good stuff.
Beer and Vinegar works for a nice flavor also
That’s the way to do it here.
Excellent Captain! 🤤 The Truth and nothing but the TRUTH! ☝️😉 God bless buddy!
Love it that's how you cook crabs I am from Maryland lived in north Beach. May have to come back and buy some crabs from you
Awesome Video my friend! I LOVE MD Steamed crabs. Grew up there and I get them every time I go back to visit! This video was done very nicely. I loved it. Thank you so much for all of your hard work and for sharing! I will tell you one thing.....I really want some crabs now!!! Lol.
Thanks. Appreciate it.
Absolutely correct about the black pepper. I like using salt and heavy black pepper. It really brings out the sweetness of the meat.
Great vid. Keep them coming. JO all day boys
I'm from Maryland mom first made seasoning then started using old bay then wye river. We would get crabs from A1 crab house back in the 70's and early 80's. They used a seasoning that was a black pepper seasoning that was good.
Seems like Wye River Black was a good one.
I’m from me born raised there than moved when I was 20 my family always used old bay
Grew up in Baltimore, transplanted to Florida. Whenever I fly in to visit relatives I carry an extra empty suitcase so I have something to put the 25# bag of JO seasoning in to bring back south.(and some packs of them Polack Johnies hot dogs)
Haha right on. I’ve seen J.O. sold in Florida. Granted, not in huge bags, but cool to see it.
As a barnegat bay (NJ shore) local born and raised, I prefer to clean the crabs before steaming, knife through abdomen, remove top shell and all guts / lungs (garbage disposal in sink is a necessity). Nice clean meat. I've come across some nasty crabs and don't want to steam all that junk into the meat. Steam in a pot with 1 bottle of beer 1 bottle of water, a few bay leaves and old bay. Season the crabs with a few splashes of beer and then old bay. You can also season the crabs with some fine chopped garlic + oil + parsley and skip out on the beer. A trick I use to prevent meat from sticking to claws is to shake the steam pot every few minutes with the lid covered. Steam for ~15-20 minutes and enjoy. I usually toss the shells back into the bay to avoid the mess and nasty cans. Im interested in trying that JO #2 I might go ahead and order some. Cheers from Jersey.
Thanks for the in depth information. I tried them that way before but mine came out mushy. I know alot of people like them that way.
Its all a matter of taste and how you grew up.All the seasoning are good but you can overdo it also. The Captain used too much for me because I Iike to taste the Crab but thats again a matter of preference. We should just be glad that we have Crabs and Seasoning to put on them. And Thank The LORD for everything that we have every day! GOD BLESS MARYLAND! Love Yall- CRABBY DADDY
I enjoy watching your videos. I've learned a lot.
I just wanted to comment on the vinegar. Many people question whether and why it is necessary. So I've done some research, and I've found that while the hard shells are firm, they are also very porous. When you add vinegar and beer to the steaming water, the flavors do enter the crabs through the steam and bring out the sweetness of the meat.
I have heard that and it makes sense. I've just never really seen where it did much. I like the vinegar because it helps keeps the water from boiling up.
Cold crabs are the best. That seasoning has time to really get into the meat! Love the videos keep em coming
The best crabs are right out of the pot! Hence- Hot Steamed Crabs!
I like them hot or cold not room temperature. Seasoning does soak in some on the cold ones too.
Like em both ..Cold are easier to pick
GREAT JOB!!!
Thanks.
Wow what a great video I'm from Maryland but now live in South Carolina are blue crabs here or pretty large in size and plentiful and they are not that expensive here for a bushel of crabs
For anyone who doesn’t have access to a MD crab house or that I suppose now defunct Wye seasoning, JO #2 is the way to go. You can order it online from JO directly.
Excellent point. Thank you
I live in Southern New Jersey, and brought some Wye River seasoning back with me. They have Old Bay here and think I've seen JO, but I'm probably one of the very few with Wye River, CAP! LOL
I give this video a big thumbs up
We thank you sir.
great video
J.O On The Crabs, Old bay on everything else..
Wye river black and vinegar always on the table . Videos are great bud
Thanks. The Black is definitely a great seasoning.
Here in MD we do not use Old Bay !!!! Say it again for those in the back😉. Buy some crab seasoning from the crab stand, crab house, some grocery stores. Wherever you buy live crabs should sell it. Taste it and adjust to your taste. I usually add at least garlic powder, black pepper and mustard powder to mine(which interestingly I don't see mentioned often, where are the mustard powder people)?
Dry mustard is still used at some places. It adds a good flavor. JO makes a Black Crab seasoning and it has all that in it. Definitely a good one.
I grew up in Maryland and everybody I knew used Old Bay including me, what are you talking about??? Now granted, I do doctor it up a little bit, but I still use Old Bay as the base...
The vast majority of crab houses use J.O #2. It's good stuff.
I appreciate your hard work and do realize how hard it is to keep a business going. I love crabs so much but I just can not bring myself to pay over 10 bucks a crab . The high prices have had a impact on how often I am able to enjoy and justify eating crabs. I guess people will pay it. Hard to justify it for me. One place had crabs in seven different sizes.... Keep up the great videos and reports. Love the drone footage.
Yes sadly prices are outrageous. I sell lighter crabs for cheaper so people can still enjoy them. Alot of people really like them.
@@FVMissPaula For picking crabs for crabmeat, I buy the heavy crabs. But I personally like lighter crabs because the claw meat comes out so easy and its extra flavored with the juice that comes out with it.
Of course, the crab snobs look down on keeping any crabs that are not rock hard. They dont know what they are missing.
@@officerkrupke4966 yeah lights are really good especially with kids. There cheaper too.
$2.00 or $2.50 a crab is normal prices in VA.
Capt CJ - I think the reason your crabs don’t drop their claws is because you already had them in a walk in cooler. So it’s almost the same effect as being on ice. Just an idea. When I steam mine straight outbid the basket on a warm day I have issues with lost claws. If I ice them in a cooler for even just a few minutes to make them semi hibernate like those in the video, very few lost claws. But I agree with you - who cares every bit of meat in that pot is going in my stomach one way or another!
Yeah makes sense. I don't often steam them straight outta the Bay.
You making this fellow here a little hungry
You got me with the blue or red pill type of way LoL
😆 just trying to have some fun. We appreciate the comment.
I’m with you on the cold crabs out of the fridge-
Have you heard of purging live crabs in freshwater for an hour prior to cooking and if so, do you recommend it?
I have never seen the need for it. I've never had sandy or muddy crabs.
J.O. 2 for crabs, old bay for everything else is my personal motto lol
It's a good motto
The intro led me to believe there was some magical recipe for the steamed crabs 🦀 other than just using JO as opposed to old bay! 🤷♂️
Other than that, the Crabs 🦀 looks tasty!
Most people outside Maryland use Old Bay to steam crabs. For them it will be magical. Haha. They were good.
@@FVMissPaula I will book a trip to Maryland to try for myself! Thansk
J.O. Is the way to go
North Carolina and Florida my whole life catching and eating big Atlantic blue crabs and Florida stone crabs. Old Bay in Carolina and Everglades seasoning in Florida. Florida has the best seafood.
I've heard of Everglades seasoning. Gonna have to try it.
@@FVMissPaula alot of grocery stores have it they have like 7 or 8 different mixes and if you Google their name you will see that they offer wholesale prices to people who want 5 gallon buckets and larger orders. I've never tried nor heard of what you use but I have had Maryland crabs being I'm from Carolina and they are delicious.
Blue crabs are very short tempered. I used to annoy them by tapping at their heads really fast. And they would blow bubbles
New one whoot whoot !!
How's your recovery going?
@@FVMissPaula slow cellulitis in my feet and legs suspect picked it up wading in the bay clamming with cuts on my feet.
Man sorry to hear. Infections are no joke. Hope ya get to feeling better. More videos coming.
so I'm originally from Georgia via Pennsylvania then North Carolina, I learned to clean first so the seasoning can get in better. I've been told Maryland style is about seasoning your fingers through ripping apart the shell vs actually seasoning the crab, as the seasoning doesn't really get through when you cook them whole. Is this true?
I might find out in a few minutes, as I cooked mine maryland style, poor man's crab seasoning recipe
I like to pull the backs off and then season them usually use old bay and salt and pepper and I also add some Apple vinegar to the water Definitely steamed not boiled 👍🏻 $120 a Dozen!!!???? I’m lucky to get $40 a dozen down here in Virginia for #1 7+ inches heavy 😩
I've never had luck pulling the top shells off. They are seasoned more but the meat doesn't stay as firm.
To me small steamed batches are the best way to go Thanks. 🦀
Yeah. I like em hot so if you do smaller batches they are hot when you are ready for the next ones.
I like to get a big pot, & put a small round plate upside down in the pot..fill pot up with water about half way up the small plate..warm water up add a spoon or so of butter to the water..put lid on pot..and just add whatever seasoning you want.. the crab won’t be directly in the water maybe an arm or two touching water..enjoy!! Don’t forget to prepare your garlic butter 🧈 for dipping!!👇🏻😁
There is nothing better than steamed crabs in the summer...
$10 per crab is exactly why you should buy a few crab pots. I like to break the carapace off, crack the claws and cook them in boiling water with Louisiana Crab/Crawfish boil.(dry and liquid). Down South we like to throw in Lemons, oranges, garlic powder, artichokes, cauliflower, sausage, mushrooms, corn, potatoes etc.
Sounds like a feast
speaking of crabs , there is crab mentality also in that area. ha ha ha
so you like what you do to the crabs, but old bay is not cool? i think old bay is cool. jo2 is cool, haven't tried yours yet? beauty is in the eye of the beholder and that also goes for taste too.
Cold crabs , J.O. #2 is good price in bulk , old bay pricey, saltier jo 2 works well with Maryland river crabs
Cold crabs the best!!
do you sell any crabs straight from the docks? i live 15 minutes from annapolis or sandy point.
I sell some crabs direct mostly the lighter males I catch and soft crabs.
@@FVMissPaula lmk what your rates on both are. You do any females as well?
@@dannpakk message me on one of the social media's.
Where can I get this seasoning?
Most local crab houses sell it or you can order it online through JO spice.
it's ready
JO here as well, loved when we could get wye river red, I do exactly what you do, but I do add a little beer…
Are you using apple cider vinegar or white vinegar to cook your crabs?
White Vinegar. Apple cider probably be fine too. I use it mostly to keep down the foam.
I like to have a good rolling steam after lidding the pot for determining cook time.
More crabs, more time.
Definitely want the water boiling before starting the time. Middle doesn't cook if you dont.
@@FVMissPaula Right. But that’s boiling crabs. Not Steaming, technically.
Got ya. I gotta try the boiled way again.
What’s the going price of soft shell crabs?
It varies. Retail is 5-10$ each.
Hello. You did well. I watch cooking videos all the time. Try to keep your videos 10 min range as a hint. Otherwise, keep throwing your son in there as an interaction fun point. You could turn this into a short. Glad I learned a new technique.
Btw great video
thank you!
JD. Here I am stuck in Minnesota with not a crab within 1000 miles. Do I miss my days on the Chesapeake? What do you think!!
I've definitely been in your position before. How's the land of 10,000 lakes treating ya?
You'll have to settle for walleye and perch filets. Put a little Old Bay on em. Might be close.
@@FVMissPaula Not quit the same thing, but your right , walleye are straight up delicious. Next winter you need to check out the eel pout fishing contest, ti might be right up your alley. keep up the good work.

OLD BAY for me and my family ! JO is to spicy and I don’t care for the rock salt. Yes I am from Maryland ! GET TO WORK LOL👍
To each his own. I would never say any way is wrong as long as there MD crabs. Haha
130 a dozen? I just seen a bushel for 64 unless I’m not understanding. Good eating friend !!
I pull the backs off them and clean them before putting them in the water.
Do you boil them or steam them?
I always clean them as well, takes an extra 20-30 minutes but well worth it. I have seen some very nasty crabs. Steam never boil.
Want to get them seasoned good after the water hot take the backs off and season just before putting in
I've never had luck with cooking them without the top shell. They get more seasoned but the meat doesn't stay as firm.
Zaterans crab boil or pro boil a bushel of crabs, onions potatoes smoke sausage or andouilie sausage, mushrooms, corn cob, whole garlic celery lemons and 4 friends and a case of beer. Works the same for any shellfish. New Orleans baby lol. Down here we dont understand why y'all put the seasoning on the shell that doesn't soak up the flavor. Yours has good presentation though.
Someone else recommended Zatarains boil. You guys definitely cook up a feast. We are gonna try doing a boil and see how it comes out.
Wow! $130 a dozen ? Crazy.
Mix the old bay with it. same seasonings, garlic, and onions. salt peppers .vinica makes it sweeter.
That works too
Boiling is the way to go...IMO.
Easy, quick and tasty.
Last longer in the fridge too.
Love your vids👍
I think alot of it comes down to what you're familiar with. Makes sense they'll last longer in the fridge.
Boiled blue crabs yucky. We dont do that here.

I've met several people that tried it and now don't want them any other way.

How do you boil your crabs? Any tricks or tips? Seen a good UA-cam video on it? I'm intrigued that there might be a way that is as good as steaming.
if you boil or use old bay on crabs we cant talk. jo seasoning or Chesapeake bounty seasoning near Solomon's island is amazing.
I've never heard of Chesapeake bounty seasoning. Ill have to look for it.
O yeah in Louisiana we know what we doing
To each his own. We are gonna try a boil and see how it turns out. I like all the stuff you put with it. Turns into a feast.
@@FVMissPaula great video I think if they taste good you have a winner that how I look at it
Mathews County Va raised. Put your crabs on ice first...make em dormant, tear off their top shell and get rid of the dead mans gills before you steam em. Yeah bubba.
Old bay is the difference between just another crab somewhere and a MD crab or crabcake.
I would say what makes a MD crab is the seasoning. Most crab houses and carryouts do not use Old Bay. They use JO or something like it.
Old bay all the way!... Baltimore knows!!!.Lived there and you aren't gonna tell me any different.
Why are crabs so high right now a 1/2 bushel use to cost me 75$ I just paid 95$ Maryland blue male crabs was definitely worth it in the end but the price is up there one crab was $4.25
It comes down to what people are willing to pay. There are not alot of crabs around right now. I think prices will come down after 4th of July
He didn't impress me none.
I don’t know what he’s talking about. A lot of people in Maryland use old bay. And some places mixed old Bay with JO seasoning
What’s the difference between the 2 seasonings? I’ve only had Old Bay.
JO #2 has flake salt in it and a little different taste. Definitely worth trying.
I like the mixture of JO and old bay. Don’t like too much salt from the JO
Did you say $130 a dozen? $24 a dozen in South Texas
You need a little bigger pot, and you put way too much seasoning. But still good.
I like garlic crab steamed garlic crab
I've heard their good. Hoping to try them sometime.
130 a dozen? Wtf We catch em in cape may and getting 100 a bushel for # 1. But hey if you’re getting that god bless
That is retail price right now for Jumbos. Not what I'm getting.
I’ll trade you some venison bologna for a few crabs !!
That's a deal. You boys make some of the best. I can still taste the thin sliced Lebanon deer bologna.
I don't like spicy so I would only use something not spicy
Did I hear that right? 130 a dozen. Know way in hell.. Come to Chas. S.C. Big full crabs not half that price. Glad to be in the low country.
Yeah for Jumbo crabs. Prices and demand are insane.
Why are crabs priced by measurement instead of weight? They cost more $$$ than lobsters lb. for lb.s
Not sure. It's just the way its always been done. There usually sold by the doz or bushel and how full of meat they are. We squeeze every crab to make sure there full of meat.
i just leave the extra in the pot or a large bowl
Be down to help you eat them
