Soft and Thick Monster Cookies

- My soft and chewy monster cookies are loaded with fun add-ins like peanut butter, chocolate candy, oats, and butterscotch chips! Just 30 minutes of chilling required.

Ingredients
10 Tablespoons (141 g) unsalted butter softened to room temperature
⅔ cup (135 g) light or dark brown sugar tightly packed
¼ cup (50 g) sugar
½ cup (140 g) creamy peanut butter*
1 large egg
1 teaspoon vanilla extract
1 cup (125 g) all-purpose flour
1 teaspoon cornstarch
¾ teaspoon baking soda
¾ teaspoon salt
1 cup (115 g) quick oats
⅓ cup (60 g) butterscotch chips
⅓ cup (60 g) semisweet chips
½ cups (100 g) M&M candies

Instructions
00:00 Introduction
00:35 Combine butter, sugars, and peanut butter in the bowl of a stand mixer (or in a large bowl and use an electric mixer) and beat until creamy and well-combined.
02:37 Add egg and vanilla extract and stir well.
03:53 In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
05:00 Add your flour mixture to your wet ingredients and stir (with mixer on low speed so that you don't send flour flying everywhere!) until flour is completely incorporated into the batter. Be sure to scrape the sides and bottom of the bowl so that ingredients are well-combined.
05:23 Add oats, chocolate and butterscotch chips, and M&Ms and stir well.
06:45 Cover cookie dough with plastic wrap and transfer to the refrigerator. Allow dough to chill for at least 30 minutes (this dough may be chilled longer or even overnight if needed).
06:57 15 minutes before dough is finished chilling, preheat your oven to 350F (175C) and line cookie sheet with parchment paper.
07:10 Once dough has chilled, remove from the refrigerator and roll into 3 Tablespoon-sized balls and place on prepared cookie sheet, spacing cookie dough at least 2" apart.
08:18 Bake on 350F (175C) for 13-14 minutes or until edges are beginning to turn light golden brown. Allow cookies to cool completely on baking sheet before enjoying.

When my kids were little I made "reese's monster cookies". With reese's pieces, chocolate chips and peanut butter chips. It remains one of their favorites.

I made these cookies, and they were excellent. I love them. I didn’t have any candies, so I used semi sweet chocolate chips, milk chocolate chips, and chopped pecans. Delicious!

I remember making Monster Cookies with my mom back in the 60's. I would ask her to let me have some dough before she put all the extras in. Had to have some without the dreaded raisins that my liked to add. 😢

My mom makes cookies that are called cow patties, and they cook and resemble cow patties lol they're really good and thick and sweet and full of the craziest stuff like you'd expect a cow to eat 😂 I am like you, I love to make the perfect cookie. If it isn't perfect, then those are the ones no one sees 😋. Either I eat them or the birds and feral cats do 😂

Hello, I don't know why you never use your standing mixer, it would go a lot faster when mixing. It's still an expensive countertop device, so for my part, I wouldn't hesitate to use it. Your cookies look delicious and soft, I will definitely make them soon. Thanks for sharing.🍪🌹
I think it's just a standing joke at this point. It's cute. I don't like to use my standing mixer. It's messy and it's bulky. I like to use my handheld

Hi can i leave out peanutbutter i cant eat it or peanut or nuts
My roommate is allergic to nuts and can’t have peanut butter, would sun butter (peanut butter alternative with sunflower seeds just to clarify) work in this recipe? If so would I use the same amount or more/less?
I have not ever experimented with it so I can't say for sure how it would turn out. Please let me know how it goes if you do try it. :)

As always, DELICIOUS!! One question: would it be possible to add walnuts?
It will work, just note that sometimes adding nuts makes the cookies spread less when baking so you may want to press them down just a little bit before baking. :)
