I just found your site and watched the Christmas set you did with the Christmas tree cookie cutter. I ordered it and made your no spread cookie recipe. I then made your royal icing recipe. I did not have butter emulsion so I substituted with pumpkin spice emulsion. I love the even roll out of your dough. I made two batches of the cookies and baked the Christmas tree cookies today. I will put them in the freezer until ready to decorate. I also made a batch of pumpkin pie and latte cookies for Thanksgiving and iced with your royal icing. They are delicious with the soft bite as you described. Your videos are so easy to follow and presentation is very calming. I have been decorating cookies for many years and have learned a great deal watching you work. I appreciate your time and talent and willingness to share with the cookier community.

My mother in law made cookies for my kids and all the grandkids for the last 25 years. My girls still come home to decorate cookies that she send us. (25 yo and married and 18 yo) Last year my mother in law moved and passed down the cookie making to me. I've always disliked the taste of her cookie recipe but never told her 😂(I know, it's awful, but i didn't want to hurt her feelings) When I got handed the tradition, I went on a mission to find a new recipe. I'm making your recipe today. I've watched the video of this and the royal icing 4 times and purchased all the extra ingredients that I didn't already have on hand (like the butter emulsion and meringue powder for royal icing). I did want to tell you, One thing I did buy a few years ago is the kitchenaid paddle attachment with the spatula on the edges that scrapes the sides while it's mixing. It's been a game changer for any baking I do. Anyway, thanks for this!! Excited to try a new recipe and continue this family tradition.

Yes 🙌 you can do this!! I know of lots or cookiers that have started with my videos, and after making some cookies, word of mouth got out and they started a business! And some are the most amazing cookie artists now, way more talented than me! Sometimes you just need that confidence to get started and then there's no stopping you!!

I love this updated version of the cookie recipe. I had quit using dark brown sugar, because I was getting to many brown spots in them. I am going to be making Winter ONEderland cookies for my grandson's January birthday! So, I will definitely be buying this rolling pin! Thank you for sharing.

And don't let those little chunks of brown sugar deter you from using it, I find dark brown sugar gives the cookies so much flavour! Hi! When grandma taught me how to bake cutout cookies, she would (and I still do) roll out the dough ON the cookie sheet. Cut out cookies. Gently remove *scraps*. This was the only way we got a few cookies that actually looked like they were supposed to! ~S

That's so awesome, glad it was perfect timing!! This one I've tweaked a bit more by adding corn starch and gives it that nice soft bit but not too soft that you can't pack of box them! Hope you love it as much as the first one!!
I always use your cookie recipe! I typically use the older one you’ve had on your channel and it’s always delicious. How does this one compare to the older recipes you’ve had?
Thank you so much!! This one has cornstarch in it, which helps give the cookies a softer bite, helps with spreading and I find also keeps them fresher longer because of the softer bite. This is one of the biggest changes to this recipe!

The brown sugar is key!!! Is it a cookie recipe without it??!!! It gives the golden colour and that nice caramelized bottom plus the buttery flavour, put some icing on it and it's soooo good!!! Hope you love it ❤️❤️

How easy is this recipe to adapt to make something like a red velvet or chocolate cookie. I love this recipe and I haven't been able to find other variations that are similar. I'm new to baking and decorating so I don't want to stray to far away from what I know (nothing 🙃).

I have not, I normally always by unsalted butter. But if that's all you have on hand, I would just say to leave out the salt in the recipe and you should be good!

You're welcome! I don't have a video on that, but I suggest you roll out your dough like an inch or two thick in a rectangle and then wrap the dough in saran wrap, and this way they stack really well and will defrost quicker and evenly when you're ready to use it!
Just used your new/updated recipe. I loved working with it. So easy to work with. Question. Can this be refrigerated/frozen and for how long? Is it better to make cookies then freeze or freeze the dough? Was thinking I would get started on the Christmas batches. Thank you!🥰
The dough can be frozen, but I personally prefer to bake the cookies and freeze them already baked. The reason being is I find that frozen dough is a bit harder to roll as it is stiff. Plus I think it's less work to bake and then decorate at a later date vs having to roll and decorate later! You can also freeze decorated cookies and they keep well!!
I would say a week or 2 max for freshness ive eaten older ones with no issues, but its good to have them fresh for guests! I usually try to have them eaten within the week and freeze if not!
Can I make a bunch of batches of dough , and leave it on counter wrapped up and than roll it out later ? I really hate to put a bunch of dough in to the fridge
I have non stick pans so they don't stick and I Iike to have some colour on the bottom of my cookies. I also find they bake a little faster without parchment paper!

Sometimes if you roll the dough several times the dough can get a texture look to it (but nothing to worry about as the taste is just fine). That's why I like to put my scraps aside and then roll them after so I'm rolling the dough the least amount of times. Sometimes it's just the environment too, and messes with our baking! But wouldn't wory about it at all especially if you are decorating them, it will all be hidden!
@ makes sense. I re made another set and quickly rolled and cut out my shaped. Put in the fridge for and hour so I’m hoping they’ll be smooth. If not they truly are delish !
I’ll definitely be trying this! Looks so yummy :) Oh and just a heads up, you can adjust the mixer a bit with a little screw, I think maybe on the underside of the part that lifts up; it’s been years since I did it so I’m not certain anymore, but I’m sure there’s a video on UA-cam somewhere! It allows the beaters to reach the bottom of the bowl so you’re not left with unmixed ingredients :)
I usually take my butter out and cut it up in chunks and then go grab my mixer and my ingredients and get everything set up and then start. So it's not too long but not straight out of the fridge
I don’t know if it was user error or preference but I actually found this tweaked recipe to be dry in comparison to the original recipe from a few years back. Bummed I waited for a large event to find that out but hoping the royal icing will ultimately balance everything out. You don’t know unless you try right!
Thanks for the recipe! I’ve been trying to look for a good sugar cookie. I’ve made sugar cookies before but they always seem to taste like flour, quite bland and seem a little underbaked. Looking forward to trying this recipe out! Does this go well with fondant?
Do you add the butter emulsion to make up for using less butter? I notice most recipes use 2 cups of butter to 5-6 cups of flour. Also, you mentioned putting the leftover cutout dough in a bowl. What do you do with it?
I just find it enhances the flavour of the cookies. There is a lot of flour so the cookies don't spread, and sometimes it makes it lack a little depth of flavour and this butter flavour is just so subtle it helps bring out the best flavours in the cookie. I also use it in my icing and it pairs so well with the cookie! I'll put my scraps aside until I've rolled all my dough and then I will go to my scraps and start rolling that. This way I'm not rolling some dough way more times than necessary which can cause bubbles on the surface of the cookie.
I first roll all the dough from the mixing bowl, then set aside the scraps. Then once I'm done with all the mixing bowl dough, I'll start rolling my scraps out and repeat the process til it's all done! This just helps the same price of dough from being rolled out a lot of times, which sometimes cause big bubbles to form on the surface or even cookies to spread!
I prefer dark because I feel like it browns the cookies better and baked a little faster than my aluminum lighter ones. But it's really your preference. If you don't want dark bottoms, lighter would he the way to go or use parchment paper!
I'm not a big fan of refrigerating before rolling as I find it really hard to roll the cold dough, but you can refrigerate the cutouts and that should help no to add excess flour!

Oh how awesome!! Everyone will love the cookies, how great to give as gifts!! Yes, all-purpose flour is used for the cookies and for the meringue powder, I get it online from a store called Flour Confections. I've used Genie's Dream and it's great too, however it's hard for me to get here in Canada as they don't deliver here so I don't use it anymore

Yes, packed brown sugar!!! And I prefer to bake the dough right away because it's easier to roll out and cracks less but you can leave it in the fridge for a day or so and should be fien!
I usually take it out of the fridge and then get my mixer out and get my other ingredients ready then cut the butter up in chunks and that's usually good enough! Sometimes if it's too cold the mixer can't mix it well so I chop it up to help it along a bit!

Are they hard when you bite into them, or just seem hard when you hold them? They need to be sturdy cookies because when you decorate them, if they're soft they will break the icing designs. These sometimes feel hard, but once they are decorated with icing, they tend to soften a little, but they normally should be hard to bite into!

Thank you so much!! This one has cornstarch in it, which helps give the cookies a softer bite, helps with spreading and I find also keeps them fresher longer because of the softer bite. This is one of the biggest changes to this recipe!

The brown sugar is key!!! Is it a cookie recipe without it??!!! It gives the golden colour and that nice caramelized bottom plus the buttery flavour, put some icing on it and it's soooo good!!! Hope you love it ❤️❤️

How easy is this recipe to adapt to make something like a red velvet or chocolate cookie. I love this recipe and I haven't been able to find other variations that are similar. I'm new to baking and decorating so I don't want to stray to far away from what I know (nothing 🙃).

I have not, I normally always by unsalted butter. But if that's all you have on hand, I would just say to leave out the salt in the recipe and you should be good!

I use unsalted, but if you want to use salted I would leave the salt out!

You're welcome! I don't have a video on that, but I suggest you roll out your dough like an inch or two thick in a rectangle and then wrap the dough in saran wrap, and this way they stack really well and will defrost quicker and evenly when you're ready to use it!
Just used your new/updated recipe. I loved working with it. So easy to work with. Question. Can this be refrigerated/frozen and for how long? Is it better to make cookies then freeze or freeze the dough? Was thinking I would get started on the Christmas batches. Thank you!🥰
The dough can be frozen, but I personally prefer to bake the cookies and freeze them already baked. The reason being is I find that frozen dough is a bit harder to roll as it is stiff. Plus I think it's less work to bake and then decorate at a later date vs having to roll and decorate later! You can also freeze decorated cookies and they keep well!!

I would say a week or 2 max for freshness ive eaten older ones with no issues, but its good to have them fresh for guests! I usually try to have them eaten within the week and freeze if not!

I have non stick pans so they don't stick and I Iike to have some colour on the bottom of my cookies. I also find they bake a little faster without parchment paper!

No, you can keep the same amount of vanilla!

Sometimes if you roll the dough several times the dough can get a texture look to it (but nothing to worry about as the taste is just fine). That's why I like to put my scraps aside and then roll them after so I'm rolling the dough the least amount of times. Sometimes it's just the environment too, and messes with our baking! But wouldn't wory about it at all especially if you are decorating them, it will all be hidden!
@ makes sense. I re made another set and quickly rolled and cut out my shaped. Put in the fridge for and hour so I’m hoping they’ll be smooth. If not they truly are delish !

Looks so yummy :) Oh and just a heads up, you can adjust the mixer a bit with a little screw, I think maybe on the underside of the part that lifts up; it’s been years since I did it so I’m not certain anymore, but I’m sure there’s a video on UA-cam somewhere! It allows the beaters to reach the bottom of the bowl so you’re not left with unmixed ingredients :)

Yup! I usually bake one day and decorate over the next 3 days or so!

I usually take my butter out and cut it up in chunks and then go grab my mixer and my ingredients and get everything set up and then start. So it's not too long but not straight out of the fridge

I don’t know if it was user error or preference but I actually found this tweaked recipe to be dry in comparison to the original recipe from a few years back. Bummed I waited for a large event to find that out but hoping the royal icing will ultimately balance everything out. You don’t know unless you try right!

I like to slightly brown my cookies and feel that helps with the flavor as well!! And I've never tried it with fondant, but imagine it would!
Do you add the butter emulsion to make up for using less butter? I notice most recipes use 2 cups of butter to 5-6 cups of flour.
Also, you mentioned putting the leftover cutout dough in a bowl. What do you do with it?
I just find it enhances the flavour of the cookies. There is a lot of flour so the cookies don't spread, and sometimes it makes it lack a little depth of flavour and this butter flavour is just so subtle it helps bring out the best flavours in the cookie. I also use it in my icing and it pairs so well with the cookie! I'll put my scraps aside until I've rolled all my dough and then I will go to my scraps and start rolling that. This way I'm not rolling some dough way more times than necessary which can cause bubbles on the surface of the cookie.

I first roll all the dough from the mixing bowl, then set aside the scraps. Then once I'm done with all the mixing bowl dough, I'll start rolling my scraps out and repeat the process til it's all done! This just helps the same price of dough from being rolled out a lot of times, which sometimes cause big bubbles to form on the surface or even cookies to spread!

Is it better to bake sugar cookies on a dark or light cookie sheet?
I prefer dark because I feel like it browns the cookies better and baked a little faster than my aluminum lighter ones. But it's really your preference. If you don't want dark bottoms, lighter would he the way to go or use parchment paper!

I'm not a big fan of refrigerating before rolling as I find it really hard to roll the cold dough, but you can refrigerate the cutouts and that should help no to add excess flour!

Oh how awesome!! Everyone will love the cookies, how great to give as gifts!! Yes, all-purpose flour is used for the cookies and for the meringue powder, I get it online from a store called Flour Confections. I've used Genie's Dream and it's great too, however it's hard for me to get here in Canada as they don't deliver here so I don't use it anymore

I usually take it out of the fridge and then get my mixer out and get my other ingredients ready then cut the butter up in chunks and that's usually good enough! Sometimes if it's too cold the mixer can't mix it well so I chop it up to help it along a bit!

Are they hard when you bite into them, or just seem hard when you hold them? They need to be sturdy cookies because when you decorate them, if they're soft they will break the icing designs. These sometimes feel hard, but once they are decorated with icing, they tend to soften a little, but they normally should be hard to bite into!

I use a non stick baking sheet so never really need parchment paper. And I like that the bottoms brown a bit as well!
