This is the almost perfect video to explain combat in Outward, however if I have to criticize this, it's probably the lack of teaching player to observe enemy for their moveset and damage type, since you will need to prepare appropriate defense against the type of enemy you would be fighting in order to avoid getting killed in 3 hits or less. This is extra important once you finish the main story quest and head into post game town building, as enemies in that area have multiple ways to get around specific type of defense even if you build for it.
