Old cucumber soup with pork ribs - How to make authentic Chinese soup

  • Old cucumber soup with pork ribs is among the most familiar soup on the Cantonese family’s dining table.
    I grew up eating this soup prepare by my mother. Now it is my turn to prepare it for my family. I use meaty pork ribs and some dried scallops, and cuttlefish as the main ingredients. I keep it simple using my slow cooker, which has been idling for many years and turns out marvelously.
    This video shows the detailed steps to make the old cucumber soup with pork ribs.

    Recipe:

    Ingredients:
    400g Pork ribs
    20 g dried scallops
    15g dried cuttlefish (one piece)
    5 Red dates (deseed)
    2 tbsp Goji berries
    650g Old cucumber (one medium size)
    1 Sweet corn (optional)
    1 tsp salt
    1 tsp sugar
    1 tbsp light soy sauce
    Water sufficient to submerge all the ingredients
    Method:
    - Wash the pork ribs under running water to remove any blood and crushed bones. Place the bone in water and bring it to a boil. Blanch the pork ribs for three minutes, then remove and wash under running water.
    - Cut off both ends of the old cucumbers. Slice the old cucumber in half, lengthwise. Remove the seeds, then cut into three-quarter inch wide slices.
    - Place all the ingredients except the goji berries in the slow cooker. Fill up the pot with boiling water just enough to cover them. Simmer for at least two hours.
    - Add the goji berries half an hour before stop boiling.
    - Season with some salt, light soy sauce, and sugar.

      It can be a challenge if you are not living in Asia. How about winter melon? (Although it doesn't taste the same).

    Any replacement for the dates.
    I also love this soup, i eat it with rice.

      I do not know of a substitute for red dates.

    Believe it or not I'm going to make this soup for dinner,but I change the pork to beef.
